On brew day started with 5 gal distilled water. Heat up 2 gals to 180 and added 1oz pack of White Labs Seltzer Max nutrient pack (link below). Combine that back with the other 3 gal and chill if needed down to 90 degrees, then pitch yeast. For this batch I used reused lutra yeast so yeast count is not precise, used about 3 spoonfuls worth of slurry.
At high krausen added the fruit, which was store bough frozen berries, thawed and blended in the blender into a puree.
Overall, fermentation went slower than expected, it took about two weeks before I called it done at 1.005. Normally seltzers should finish at 1.000 but I am assuming the fruit had some residual sugars/gravity causing it to not ferment all the way down. The high FG and slow ferm could also possibly be from a low pitch rate. Also some colleagues messaged saying it could possibly be caused by a pH imbalance (did not take any pH readings). Another colleague said to use more nutrient than recommended by White Labs.
The rose water extract (link below) is really strong and can come across as soapy if overdone. I tested drops in the glass off the tap and determined one drop per 16oz pour was about right. Added 30 drops to the keg before canning. I realize this is very imprecise especially for scaling. It registered as 0g on my scale and imperceivably small volume in my measuring cup.
Carbonation was also not measured well, just added co2 until it seemed right. I think standard for seltzer is between 2.8-3.0 volumes.

| Notes: I am still trying to find the right extract brew that comes out not to bitter and not to weak and has good flavor that I can produce in a total of 1 hour in the kitchen. Looking at the BU/GU ratio as a guide. Plan to brew this in March 2021. Not as dark as it should be, but I don't have any darker malt or DME in house. |

Notes: - Bring 3 gallons of water to 158 degrees.
- Steep the grains for 20 minutes.
- Remove the grains from the pot. You may discard the grains and bring the water to a boil.
- Remove from heat. Add extract and stir until thoroughly dissolved. Return to burner.
- Boil for a total of 20 minutes. Add hops per schedule above.
- Chill to less than 100 degrees.
- Strain and funnel to fermentor.
- Add cool tap water until desired volume or gravity is reached.
- Pitch yeast when temperature is less than 72 degress.
- When fermentation is complete, prime with corn sugar, table sugar or carbonation drops. |

Notes: Cachette was out of a few ingredients, including bulk light extract, and the American Wheat Ale yeast, so this became a Frankenstein. Kit sat on kitchen counter for a couple months, during which time I went to Ireland.
The ratio of wheat to barley malt is about 55/45. I've never gone this high. Boil went perfectly.
Was confused why calculator was making my OG so high, and reduced the liquid malts as a result. Then, after finishing EVERYTHING and topping off to 6 gallons, realized I'd put in 192 ounces of steeping grain instead of 12. So OG dropped from 1.061 to 1.036. This is going to be the weakest beer, ever. Probably not very well balanced, either.

Steep Belgian malt at 160 F for 30 minutes.
Bring 3.0 lbs DME and water t boil, add wort from grains. Return to boil and add 0.7 oz Magnum hops. Boil for 40 minutes. Add 0.7 oz Magnum hops, add 3.3 lbs LME, and boil for 20 minutes. Add Irish Moss with 10 minutes boil remaining. Remove from heat and add 0.6 oz Magnum hops.
