My tasting notes state:
"15 Sep - Got Drunk, broke down, and tried a bottle. (should have been opened 18 Sep, 2 weeks after bottling) It tastes great! Rick said it was the best beer he ever tasted, though he slurred his speech as he said it. Beer was carbonated, smelled a bit yeasty, and had a good head. Beer was murky, but had a good color. I think storing it in my (wardrobe) locker is not a good idea (I was in the USAF at the time), the vibrations from opening & closing aren't letting the sediment settle properly. Oh well." |

Notes: Prepare your palate for flavors both copious and complex -- from tart and sour to subtle and sweet, thanks to the cherry puree added as a late addition in this kettle-sour.
1. Heat 2.5 gallons of water
2. Bring to a boil, add fermentables.
3. Boil wort for 5 mins to sanitize, then cool to 75-95 degrees.
4. Once cooled to 75-95 degrees, add Omega OYL-605 Lactobacillus Blend.
5. Let wort with Lactobacillus rest at the same temperature in the boil kettle for up to 3 days (depending on taste). More days = more sour.
6. Once soured to taste, bring wort to boil (to kill lactobacillus bacteria) and continue the brewing process. |

Steep grains for 15 minutes at 160 F and sparge into brew pot. Add LME and honey. Add Nugget hops. Boils for 30 minutes. Add 0,5 oz Tettang hops. Boil 20 minutes. Add Irish Moss and boil 10 more minutes. Remove from heat and add 0.5 oz Tettang hops.
Sg = 1063 on 11/17/11
Rg = 1018 on 12/10/11
Bg = 1018 on 12/27/11.
Bottled with 3.15 oz priming sugar
Notes: Nice mellow porter with a kick. Moderate carbonation (English pub) with a good head and lace. |
