Notes: Mash at 68 celsius and sparge at 72 celcius another 5 liters. The OG was 1.062, FG was 1.010 so not too bad. ABV - 6.8%... I went for a 2.9 on the CO2 secondary fermenting. That was a total of 178 grams of sugar for 19.5 liters of beer. I worried it may have been too much sugar and the beers might explode. We will see in the next couple of days. |

Notes: Steep grain in 5.5 gal at 170 for 15 min.
This recipe features 2 extract additions: The first addition will be at the beginning of the boil, and the second will be at flame-out.
This beer requires a 90 minute boil, so increase the boil volume needed to wind up with 5.5 gallons in the fermenter
(for the 5 gallon sized batches).
Wait until a few days after primary fermentation subsides, then melt the dextrose into a simple syrup solution, boil for 5 minutes, and cool to room temperature. Add this solution to the primary fermenter. This will cause the yeast to move through the
complex maltose sugars first, and then finish off the simple sugars, and will cause maximum attenuation. |

Notes: Directions for making Malt Tonic (1928 - Roger Pochon)
Place 1 package (3 oz) Oregon Hops into 2 gallons of water, boil continuously for 50 minutes. Strain same through double thickness cloth, squeezing out all juices from the hop leaves.
Add to the liquid, one jar concentrated malt product (2 ¼ fl. conn), 1 ½ - 2 lbs brown or white sugar. Stir well and again boil same for 15 minutes, stirring same and skimming off all foamy substance. Strain into a six gallon jar adding 4 gallons of cold water. Dissolve cake of compressed yeast in cup of luke warm water and allow same to stand for 5 minutes. Make sure that the temperature of mixture is not over 80 degrees F. before adding dissolved yeast.
Place jar where temperature is between 75 and 80 degrees, leave same stand for 60 hours, skim off foam twice a day. When bottling be careful not to stir up sediment, after bottled place in cool dark room for one week.
The tonic becomes better with age. Put on ice before serving. If after standing for 4 or 5 days has too much gas, it indicates that the same was bottled too soon. On the other hand if tonic lacks gas, it was allowed to ferment too long before bottling.

Notes: 14 lbs of Apple Juice in the recipe gets to the actual OG (since no way to add volume of juices) - actual recipe is 1.5 gallons Apple Juice and 0.5 gallon Cranberry juice. Add pectic enzyme (for clarity) and wine tannin (for structure/mouthfeel/bitterness, since only using store-bought sweet apple juice. Can also add Acid blend as needed to taste) while pouring juices into fermentor to mix (shake to mix and aerate, as well). Use kveik and ferment at room temp (or hotter if you like!). After fermentation, back-sweeten after stabilizing (with K sorbate and Campden tablets) with 1.5 cans apple juice concentrate. |
