Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5gal recipe you will need extra because of the fluid loss during the boil process
2lbs American Two Row
1lb Caramel 10
1lb Cara Pils/Dextrine
6bs Gold Malt Liquid Extract
6oz Citra – aroma
2oz Centennial – dual
2 Saflager S-23 dry lager yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Gold Malt Liquid Extract and return wort to boil
Add 2oz Citra hops and boil for 60 minutes
Add 1oz Citra hops and boil for 20 minutes
Add 1oz Citra hops and 1.5oz Centennial hops and boil for 10 minutes
Add 1oz Citra hops at flame out and whirlpool for 10 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.056
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 2 weeks at 64-68degrees
Secondary – 2 weeks at 50-54 degrees
Secondary – 2 weeks at 44-48 degrees
Add 1oz Citra hops and 1oz of Centennial hops to secondary 5-7 days before bottling beer
Bottle beer 5 - 7 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer.

Notes: I really like using orange peals while brewing - it pairs nicely with hops and highlights the citrus profile of the Cascade and Citra hops. This recipe utilizes dried orange peals from the Cara Cara orange. I buy them from Sprouts then dry out the peals in my dehydrator. Cara Cara oranges are a type of navel orange and is generally sweeter and less acidic than typical oranges. That makes them the perfect type of orange for brewing.

I originally called for 1 oz of orange peals in brew and dry hop but I upped that to 1.5 oz because that's what I had on hand. I also dry hopped in the primary rather than secondary.
Tasting notes:
This couldn't have come out better. It has a wonderful citrus aroma with a palatable, but not overly bitter, blend of hops. It's about as perfect of a New England IPA as you can get. Not as hazy as a lot of commercial varieties, but just as juicy.
Future changes:
The next time I brew I think I'll keep the 1.5 oz of orange peal both in boil and dry hop. However, I'll dry hop during the secondary instead of primary. I think I'll try the Imperial A24 Dry Hop next time as well. I was very pleased with A20, however, and highly recommend it.

Break yeast packet
1-2 days later 1/2 cup of malt extract into 2 cups of water (or double this in a gallon jug).
Bring to boil - simmer for 10 mins. Add ¼ teaspoon of yeast nutrient.
Cool to 80 F - pour into sterile 2 qt. jar. Add yeast and cover with aluminum foil.
Shake as often as possible (seriously, multiple times a day!)
Wort:
Bring 3 gallons of water 160F. Add lager malt and steep for 40 mins.
Add 2.6# of DME to reach a pre-boil gravity of 1.055. Add water or extract to reach target gravity. Check gravity with refractometer.
Bring to boil and add bittering hops.
Boil for 55 mins. and then add aroma hops.
With 15 mins. Remain, add 1 tsp. of Irish Moss.
Boil for 5 mins. Then turn off heat. Add remaining DME. Stir to dissolve and begin to force cool.
Cool to 80F, and add to cool water in fermenter. Take readings.
Aerate well and pitch yeast.
Ferment for 1 week between 64-72F. Transfer to secondary and dry hop for 2 weeks.
Bottle with priming sugar. Drink in 2 weeks.

Notes: WLP028 yeast pitched into a 1ltr flask of sterile "sweetened" water after bringing up to ambient temperature then covered for 12-24 hours prior to mixing into wort. I find this works well and this usually starts fermentation within 8 hours. (Note: boiling reduces O2 content, vigorously shaking flask prior to adding yeast is helpful)
Wort was cooled down to 70 degrees with copper immersion "chiller" before transporting to primary fermenter. Pitched yeast is added and additional sterile water is added to approximate 5 gallons when needed at this step, 10 minutes of aeration is then done. Specific gravity was taken; OG 1.108 (missed target by +.003)
I use a blow-off tube instead of the typical airlock as I find this works well for me. There have been times when the fermentation is robust and I get overflow. (tube is inserted into a gallon jug half filled with star san solution)
Target Fermentation is 7-10 days, will take several SG's before crashing, filtering and kegging. |
