Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5gal recipe you will need extra because of the fluid loss during the boil process
1lb Briess Two Row
1lb Carahell
1Ib Caramel 10
.5lb Cara Pils/Dextrine
6bs Liquid Malt Extract
3.5oz Citra – aroma
3.5oz Centennial – dual
2 Saflager S-23 dry lager yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Liquid Malt Extract and return wort to boil
Add 1oz Citra hops and boil for 60 minutes
Add 1oz Centennial hops and boil for 30 minutes
Add 1.5oz Citra hops and 1.5oz Centennial hops and boil for 10 minutes
Add 1oz Citra hops and 1oz Centennial hops at flame out and whirlpool for 1 minute
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.056
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 1 week at 60 degrees
Secondary – 1 week at 50 degrees
Secondary – 1 week at 30 - 35 degrees
Kegging:
Keg after 3 weeks and set CO2 to 20psi for 4-5 days, then reduce to 5-7 psi and enjoy!

Notes: This beer originated in my mind as a honey oatmeal stout, but i decided milk and honey went together better. I was originally going to use 2 pounds of raw honey, but everyone i have talked to and all the honey beers i have tried that did so wound up tasting funny a few weeks after bottle conditioning. Decided to skip raw honey and focus on high amounts of specialty grains, lower abv, and lighter color. Borrowed this recipe for a base:

This recipe was chosen for its lighter color and lower abv as not to overpower subtle honey notes.
I then substituted my own yeast and hops varieties, changed the chocolate grains to 1 lb specialty honey malts sourced from Root Shoot Malting (keep it colorado local!) and substituted crystal for 4 oz roasted barley.
Was considering using a Lager yeast to help with sweet notes, but my local brewshop (Elevated Fermentations of Loveland) recommended keep it ale but do a hefeweizen. this is going to let those sweet notes and possible banana notes to come through, complimenting the honey notes (in theory)
i am not too familiar with Cluster hops but their flavor profile did not match my goals so i chose Magnum for bittering since it does not impart a strong flavor profile, again allowing the subtle honey notes to come through, then cascade for aroma. I feel the fruity/sweet notes of cascade will accentuate the honey, and is pretty common in most colorado beers from what i have found.
Originally hoped to do a yeast starter but my schedule won't allow so just going to hope for the best and pitch straight from the tube on brew day, which should be fine. In the future if i make this again i will make a starter to maximize my potential.
My hope is that the flavor profile will be simple enough to be able to taste light forward notes of honey, subtle underlying notes of coffee, and a chocolate finish. Should have a creamy mouthfeel but otherwise light. |

Notes: WLP028 yeast pitched into a 1ltr flask of sterile "sweetened" water after bringing up to ambient temperature then covered for 12-24 hours prior to mixing into wort. I find this works well and this usually starts fermentation within 8 hours. (Note: boiling reduces O2 content, vigorously shaking flask prior to adding yeast is helpful)
Wort was cooled down to 70 degrees with copper immersion "chiller" before transporting to primary fermenter. Pitched yeast is added and additional sterile water is added to approximate 5 gallons when needed at this step, 10 minutes of aeration is then done. Specific gravity was taken; OG 1.108 (missed target by +.003)
I use a blow-off tube instead of the typical airlock as I find this works well for me. There have been times when the fermentation is robust and I get overflow. (tube is inserted into a gallon jug half filled with star san solution)
Target Fermentation is 7-10 days, will take several SG's before crashing, filtering and kegging. |
