Fermentation in FV for 6 weeks, not 2-3 weeks as is stated on can. Flavor and taste increasing from week 3 to week 6. Hoppiness only after week 4. Steep even longer than 6 weeks, use different yeast.
Used 1 kg Coopers beer enhancer no. 2 instead of 1 kg of DME. Priming with 150 g of dextrose pitched to beer not bottles.
I've bottled on may 20th 2017 and fist tryed it on may 31st. It's already a vey good beer. |

Notes: Bake shredded coconut at 350 for 15 minutes flipping every 5 minutes until coconut is evenly toasted. coconut and vanilla bean added to 750mL of white rum and left to sit for 2 weeks, then put in freezer to separate fat and oil from alcohol. 30 hr. 200mL yeast starter on stir plate with the appropriate amount of yeast nutrient and DME added. ascorbic acid to reduce oxidation risk. 69F average fermentation temp. FG reached in 3 days - *FG reading will higher due to lactose* - take gravity readings! Oregon Fruit Pineapple puree frozen for two weeks in can. Pineapple puree, vanilla/coconut extract added to 200 micron sanitized mesh bag and then added to sanitized keg. |

Notes: After about one week of primary fermentation with neutral sacc yeast, rack to minimize headspace and add starter of dregs (I added 5 different lambic or lambic-style beer dregs, plus a vial of Brett Lambicus). Can add a few oak cubes of you like (just boil them first so they’re not too strongly flavored). Put in a temp-stable closet and forget about for a year or so... |

Notes: Dusseldorf alt is an old German style fermented at 60-65F;conditioned at 50-60F. Compared to N. Europe alt it's slightly more bitter with similar sweet malt character. Bittersweet, nutty, dry finish reflects assertive hop and complex malt.
Best found at Alstadt (old town)in Dussel.
Turbinado in boil was a vanilla specialty sugar from Whole Foods. |

steep grain as suggested on pack - and adding steeping grains into boil at 30mins. boil kettle set aside and add grains for 20 mins to steep then add to boil. Boiled kettle then poured into bowl at 7.5mins and let sit till 10mins then added grains for 20 then added to boil.
Boiling 5 litres of water as steeping grains in 1 litre to give 6 litres then adding 1litre of cold at fermenting total
Add hops as schedule. weighed out and leaving on side. Hoping non of the smell, flavour is lost as out in the elements. Vic secret smells outrageous! Amarillo hops is in a pack as finishing hops and using as suggested. Place in a cup of boiling water and let stand for 10mins then add to the fermentor. adding liquid and bag to fermentor. (not hopback)
Note let fermenter cool for 10 before adding vic secret then changed ice and water to cool further for 10.
Let cool for a further 10 mins while finishing hops were sitting in cup water before adding to fermenter. Amarillo hops in tea bag
added 2 litres of cold water to fermenter to get to 6 litres
waited 10mins to pitch yeast as first reading at 22 degrees. Pitched yeast at approx 20 d and shook like f**k. Done

After 6 days fermenting yeast has really slowed down. Going to rack half off and dry hop with vic secret (adding hops first then racking onto, and dry hop in the primary with 20 g wai-iti. Also going to bottle one beer now to see how it tastes. Shook both fermentors a little to swirl hops about.
After racking probably only got 2.5litre in both vessels left inc one bottled beer.
