THE GOLD LME WAS NOT AN OPTION ABOVE! THE GOLD LME OPTION WAS NOT AN OPTION ABOVE SO I PUT 9.15 lbs of Pilsen LME. When I tried to add GOLD LME it did not calculate correctly. Pilsen would work BUT GOLD LME IS THE CORRECT LME, NOT PILSEN! PLEASE UNDERSTAND THAT IF YOU USE PILSEN YOU WILL NOT HAVE THE SAME TASTE AS TWO HEARTED IPA! I APOLOGIZE BUT GOLD LME IS NOT AN OPTION ABOVE. PLEASE USE GOLD LME! A starter is advised! 2 stage fermentation is a must. Expect aggressive yeast activity within 48 hours. An airlock will NOT handle this. You will need a blow off! 1056 is a super active yeast. It will blow the top off of a bucket or blow up a carboy, no joke. US Safale 05 is a great dry yeast option if you don't have a blow off. Thank you and enjoy your beer my fellow HOP HEADS! Oh, feel free to use 2 ounces of Centennial hops, instead of one, when dry hopping. This would be dry hopping at 2nd fermentation. Also, depending on how hoppy you want it, you could put the hops in for the whole 10-14 days during the second fermentation, 1 or 2 ounces. Or, for less hoppiness, add 1 ounce a week into the second fermentation and just allow to dry hop for a week. The choice is yours. Just depends on what you want and how aromatic and hoppy you want the final beverage. Enjoy. |

I have been plagued several times by liquid malt extract that claims to be "light" when it's more pale or amber colored. Needless to say, this batch came out to be more like the color of a typical pale ale with a slight reddish tinge. |

Recommended to bring mash pH down to 4.0-4.3 (https://beerandbrewing.com/become-a-kettle-sour-expert/).
Steep grains for 20 minutes at 155. Bring temp to 170 and add in all of the DME. Heat for 15 minutes and then cool down to 120. Add 3 oz. of Omega OYL-605 Lactobacillus. I kept the last 1 oz in the fridge in case I needed it later. Maintain a temperature of 92 (+/- 2 degrees) (http://www.milkthefunk.com/wiki/Lactobacillus). Using a FermWrap FE650 for heating and an InkBird ITC-308 for controlling the temp.
After 72 hours, start the 30-min boil.
At day 3 of fermentation, I sanitized and cut up 6 lbs. of Loquat fruit. Discarded the pits. I put the fruit in 2 grain bags. I didn't use grain bags with my last sour and the amount of sediment was an issue on bottling day. I made sure to give the fermenter a little shake each day so that air wasn't trapped amongst the fruit. I've read that not doing so can cause some mold to start to grow.
2 days before kegging, I took out the fruit and squeezed as much liquid from them as I could. Kegged on day 30.
I'm happy with how this came out. I may have preferred closer to 8 - 10 lbs. of fruit, but loquats are a pain to de-seed. Tasted like a good sour with some fruit. Not like the new, over-juiced beers that are coming out. |

Notes: Place grains in 2.5 gallons water and bring water up to 151 F. Seep for 30 Minutes. Drain into boiling kettle. Sparge twice with 2 qt hot water (170 F) Dispose of grains.
Add liquid extract. Top off with 3 gallons of water. Bring to boil and set timer for 60 min
Add boiling hops at begin of boil. With 15 minutes remaining add irish moss.
At the end of 60 minutes, shut off heat and add finishing hops. Begin to cool.
When cool to 70F. add to fermenter. Aerate well. If needed top off with cool (pre-boiled)water to come up to 5 gallons. Pitch yeast starter. |
