Notes

Used 280oz (14 imperial pints) of water for steeping. Lost a bit of crystal so down to 1 lb and 7 oz vs target if 1.5 lbs. steeped for 20 minutes but went a bit high at 175 degrees so turned off heat for last 10 minutes. Added 2 oz cascade to the boil to hit IBU target. My hops were lower alpha than target Added almost 5 lbs LME to the boil by mistake which meant that my wort concentration was a bit high. This will lower the alpha isometrization and slightly reduce bitterness.

After 2 weeks in barrel first sample was tasty but not quite like Manny’s. More like a hoppy ESB. Malt was a little strong so maybe use crystal 40. Hops were good. Strong yeast presence and lots of carbonation.

After 4 weeks there was still really good carbonation. Color was mid-brown, and while easily drunk it's not like any recognizable style - maybe part ESB, part pale ale, part something yeasty!
