Notes: Generate 6 gallons of water at 155 degrees. Add the water additions at this time.
Pull off 2 quarts into a 2nd kettle to steep the specialty grains. Maintain around 150-155 degrees for 30 minutes.
Rinse the grains using water from the 1st kettle and then add this water back into the main boil kettle.
Raise temperature to around 200 degrees, cut the heat and add the DME stirring to avoid clumps. Raise temperature to full boil and then begin the hop schedule. Remember to add Whirlfloc and Yeast Nutrients with 10 minutes remaining in the boil.
Perform a whirlpool of sorts using the pump for 15 minutes after the boil, adding another 1 ounce of hops at this time.
Cool the wort, aerate, and add yeast.

Notes: Steep Caramunich 20 ' 155 deg water and sparge into water for boil.. Made a yeast starter 12 hours before brewing. Add dry malt w/ an immersion blender when water was about 165 degrees, and add corn sugar - 1st hops. Used Amarillo just to raise the IBU a little was what else I had on hand, the Hallertau had a very low alpha acid %. Staggered hops. Add spices + I moss as indicated. Star of Anise - added three of the "arms" to be conservative - just part of a full "star". Coriander seed crushed w/ Rolling pin. For honey - mixed in 100 degF water and added after wort after it cooled to 100 deg or lower. Add yeast starter when wort at 72 deg F.

1lb Caramel 10 Grain

.25lbs Carapils Grain
.25lbs Carahell Grain
6bs Golden LME
2oz Mosaic Hops
4oz Centennial Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME, and return wort to boil for 30 minutes
Add 2oz Centennial hops and boil for 20minutes
Add 2oz Centennial hops and 2oz Mosaic hops and boil for 5 minutes
Remove pot and enough bottled water to bring the specific gravity to 1.056
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 5-6 days
Reduce CO2 to 5 - 7psi, pour and enjoy
