Notes: Steep at 155
Two weeks before bottling start the infusion of Pablano, chipotle, and Jalapeno peppers, without seeds, in about 5 oz of cheap vodka.
After two weeks strain the infusion through coffee filters to remove the trub.
Add the infusion to the bottling bucket along with the sugar before bottling.
Transfer to secondary after one week or ten days then after a week in secondary cold crash the beer for two weeks.
Before bottling add 1/2 pack of us-05 to the bottling bucket to ensure carbonation. |

Notes: 3/14/15: Brew day.
Steeped specialty grains for 20 minutes in 2.5 gallons of distilled water, at 153-148ºF.
Added 3 gallons of distilled water, covered, and heated to a boil.
Added DME and LME, and 0.5 ounce German Tradition pellets. Boiled for 75 minutes. Added 1 tablet WhirlFloc with 15 minutes left in the boil.
Chilled to 65ºF using immersion chiller, let stand for 15 minutes, aerated for 40 seconds and added solid stopper. Gravity 1.054. Transported 25 miles in a car.
Aerated for another 40 seconds intermittently and pitched a smack pack of Roeselare, as well as the bottle dregs from Tilquin Oude (Gueuze Tilquin)², Lindemans Gueuze Cuvée René, and Allagash Midnight Brett.
Installed blowoff tube and left in closet to ferment at ambient temperature of 66ºF. Vigorous fermentation 24 hours later.
4/12/15: Added dregs from a bottle of Hanssens Artisanaal Oude Gueuze.
4/19/15: Racked to secondary and added 1 ounce of Burgundy-soaked oak cubes.
10/29/15: Pulled a sample. Gravity at 1.008. Smells of leather, cherry, mild funk. Flavor has a light, yogurty acidity, mild fruit and funk, and full mouthfeel. |

Notes: This was a monster ferment. I had the blow off hose in the primary for 5 days. Detected some apple esters initially, but after 2 weeks in the primary the beer cleaned up really nice. I would describe this beer as being very clean and crisp. I added an ounce of dry hop pellets after racking it to the secondary. After 5 days of dry hopping I removed the bag and added a fresh bag of another half ounce of citra and one ounce of mosaic hops. |

Notes: 1 lb of honey added to the boil at the 30 minute point and 1 lb honey added at 10 minute.
Made a 2000 ml yeast starter, but did not let it ferment long enough before cold crashing to clarify. I ended up adding the entire 2000ml to the wort instead of decanting the clarified starter.

The beer has a clean crisp taste with a nice bitter taste with no sweetness whatsoever.

Notes: do not add cane sugar / this was used to calculate the sugar in the apple juice (416 g per gal.) make sure to use a pure apple juice "read the label" no preservatives or you may kill your yeast.... and no added ascorbic acid this will throw off your acidity.
use molasses to prime @ 3/4 cup per 5.5 - 6 gal finish beer
first time brewed-did not like the molasses prime ( personal taste to much molasses flavor )
second time brewed - i used brown sugar and it was just the right amount of kick to the apple ...
it's a matter of taste if you like the bold molasses then go for it i preferred the brown sugar
