Substitutes; (Made this beer on my first day of COVID so I was a bit knackered and out of it.)
- Didn't have any wheat malt so left it out of grist.
- Added in 500g of Light DME.
- Accidentally added 6g of Brewtan B instead of 0.5 tsp.
- Whirlpool hops dropped from 60g Rakau to 40g and 40g Nelson Sauv dropped to 20g (save opening new bags).
31/3/22 - Dry hopped at 19C.
12/5/22 - Still tasting great, the hops have died back a bit but still an easy drinking and delicious beer. |

Notes: Not sure if this recipe builder accounts for the use of enzymes in mash or ferm, but ideally the Final Gravity on this one should go as low as you can get 'er. sub 1.000 even. Also, I'm not sure if it's a good idea to use Champagne yeast in wort normally, but I'm assuming the enzyme will allow that yeast to do it's do. If not, use a high attenuating neutral strain like Cali, or Nottingham, I'd even use 34/70 for f's sakes. Either way aim for highly fermentable wort, and use the enzymes to get low. You want this fkr bone dry, and hoppy as super-balls. Favor the Nelson Sauvin in the cold side hops. Use some dextrose if you need to bump up OG. |

Notes: The late addition 4 oz of DME (I had wheat on hand - use whatever) is added to 2 qts water in separate pot during the mash, and boiled down to one pint or cup even (reduce by 75%, or more even, to create “kettle caramelization” Maillard reaction flavors), then added into main boil toward the end.
Use yeast slurry from previous batch (mine from Best Bitter I’m kegging same day), or build big enough starter for big beer. Oxygenate adequately. Start fermentation at 64° for about three to four days, then raise to 66° for two, 68° for two, and then 70° to finish off... |
