Notes: Use "Brulosophy lager method".
50° until 50% attenuated. Then, remove the probe from the side of the fermenter so it measures ambient temp in the chamber and start bumping the regulator up 5°F every 12 hours until it reaches 65°.
Allow the beer to remain at this temp until fermentation is complete and the yeast have cleaned-up after themselves, which can take anywhere from 4 to 10 days.
When FG is stable and no diacetyl or acetaldehyde is detected in the beer, begin ramping the temp down in 5°-8°F increments every 12 hours or so.
At 50, add gelatin. When it reaches 32°F (-1°-0°C), allow the beer to remain at this temp for 1 day minimum, during which it will drop clear.

Notes: East Berliner IPA - Mash up between a Berliner Weisse and NEIPA, then fermented w/ Brett
- Pull malt after 68C, bring to a slight boil to sanitize
- Pitch 50 g unmilled acidulated wheat after mashing.
- Bubble with CO2 to discourage aerobic bacteria and build a blanket on top of the wort
- Maintain in a warm environment until pH lowers to ~4
- Bring to a boil to sanitize
- Add whirlpool hops at 150F (or thereabouts)
- Pull onto fermenter
- Add first dry hops at high krausen
- Add second dry hops as fermentation slows
- Move to warm environment for diacetyl rest with third dry hop
- Cold crash for 1-2 days after stable

- Didnt sparge properly so efficiency pretty crap.
- Maybe too bitter?.
