Fermenting at 75 degrees, checking in with Tilt Hydrometer to wait for yeast to be active on the alcohol making side. 1st few days with Philly Sour should be mainly Lactic Acid production. Then will add pureed mango to a hop sock and leave in ferment for 5 to 7 days. Will be bottle condition post 1st fermentation.

Notes: Dough in at 142° and hold for 15 min. Step up to 158° and hold for 45 min. Mashout & dunk sparge @168-170°. Collect 7 gallons of wort, topping up if necessary. Boil for 60 minutes. Add Magnum, Chinook & Crystal hops & whirlfloc according to schedule. Add corn sugar last 15-20 min of boil.Chill wort to pitching temperature. Boil 0.5 - 1 L of water & let cool to 170. Add Citra hops and let soak for a while, then add to fermentor ("Dip-hopping"). Aerate wort & pitch yeast. Ferment in mid-60s.
Full-flavored, full-bodied, assertively hopped but not at all harsh.
This may be an IPA for those who don't like IPA.

Carolina Yeast BL09 - Saison Blend - Prepared 1.5L starter evening prior to brew day
To prepare the coffee: Brew 8 oz (227 g) of medium-ground coffee (preferably an Ethiopian sun-dried or your favorite fruit-forward, light-roasted coffee) using about 45 fl oz (1.3 l) of cold water. Allow to brew for 8−16 hours. Filter out the grounds.
Fermentation:
Chill the wort to 62-64F (16.67-17.7C)
Oxygenate/Aerate the wort with about a 30 second blast of oxygen through a stone.
Place the wort in a temperature controlled environment at 65F (18.3C) for 3 days before letting ramp (or if you're like me and don't have enough space for temp controlling everything - I'll place the fermenter in an iced water bath and let the heat of the day and the ferment melt the ice and raise the temperature to mid 80's and 90's (29-35C). It's perfectly safe to drive a Saison yeast this hard if you've started cooler. |
