Notes: Mash at 65°C for 60 minutes. Boil for 30 minutes. At high krausen (24–48 hours after pitching yeast), add 2.5 kg of fruit mix (mango, pineapple, peach, and passion fruit) to each fermenter.
Note: The fruit addition contributes approximately 1.005 gravity points, increasing ABV from 2.6% to 3.1%. While 1kg sugar adds 1.008 gravity points, in this case, it will primarily be converted into lactic acid rather than ethanol, enhancing the beer's tartness. |
