brewed on 1/20. 3 weeks in primary, kegged, chilled, fined with gelatin and burst carbed at 35psi for 18hrs. ready to drink now but a little green. wait a week and it will be wonderful. the little bit of citra reall makes this style shine and is a favorite with friends and family.

| Notes: this turned out to be a very strong flavored beer with a caramel overtone, ran it through a 5 micron filter then dry keg hopped with 1/2 ounce each of Amarillo, Cascade and Hallertau tied to the bottom of the dip tube then bottled through it to end up with a nice finish, overall very nice and twice the flavor than most Belgian Saison's but I think this turned out very good! |

Pirate life Mosaic is 7% ABV and 58 IBU
Pirate Life Uses Pale 2 row and Carapils and obviously Mosaic.
Tried no sparge method with this brew and still achieved 75% efficiency which is equal to when I sparge. Just stirred the mash a few times.
ABV & IBU were spot on, Beer tastes so close to the PL.
Belgian malt was used as that's all i could get from brew shop at the time but worked well.
Colour was so close to the PL.
You could dry hop more, however it was high in hop flavor and aroma. Will definitely make this many more times to come!! |

| Notes: While beer is in primary fermentation, soak 1/2 oz shredded coconut, 2 oz cacao nibs, and 1 vanilla bean (halved and scraped) in light rum for about a week. Then rack beer on top of these ingredients in secondary, as well as 6 oz more coconut, but toast this in oven until golden brown (be careful not to burn - only took about 6 min at 400°). Leave in secondary at least one more week, then bottle. |
