Notes: Perform the mash as usual, instead of proceeding to the boil, pasteurize the wort at 180 degrees F. Let the wort cool to 90 degrees F and add 8 capsules of lactobacillus plantarum from Swanson Pharmaceuticals, let sour for 3 days, then bring up to 180 F again to kill off the microbes and pasteurize -Berliner is traditionally a raw ale. Added 4 oz peach flavor extract and 4 lbs of frozen and then juiced costco mango to keg, before carbonating. |

Notes: The nose is very strong with roasty, chocolate, coffee notes. With an indistinct fruityness maybe cherry behind a molasses-y layer. Not very strong in the hops or smoke departments.
The head is tan-brown with medium retention. Silky mouthfeel, with low-medium carb. Very deep brown/amber colour body.
The flavour is exceedingly complex, the first note is roasty caramel flavour that fades to a light chocolate sweetness. The next wave has a plumy, raison flavour, combined with a slight smokey dryness and just the lightest/almost imperceivable heat. Alcohol level is balanced, maybe an edge of heat to it.
Overall the beer is very pleasant, the chocolate and pepper flavours are weaker than I hoped. I would suggest maybe adding more chocolate malt or some cacao nibs. |
