Directions
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose,
and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort
to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter
and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then
add the second set. Age five more days then bottle or keg the beer |

| Notes: Strike water was about 175 which brought everything down to about 152 on average (154 in the middle). The mashout actually ended up being too strong and brought it up to 180ish so I put 2 quarts of cold water in immediately to try to stem tannen extractions. I got lower efficiency than I expected. Not sure why but could have been the 2 row pale or that I had grain balls that didn't convert. |

Notes: kettle sour, boil, then whirlpool w/ 3 oz of your choice of hops (I used Mosaic, Cascade, and Amarillo most recently) making sure not to go over 17 ibus or so ferment out w/ clean yeast of your choice (I always use wy1098 for my kettle sours) dry hop w/ 3 oz hops for 4 days.

| Notes: I hit 154 on the nose even though I had wanted to get up to 155. I topped off with a liter and a half of water but didn't seem to want to raise the temp much so I settled for 154. Because I was at about 1.010 in the last running of the sparge I topped off with 1 gal of regular water instead of sparging more. |
