Chai Spiced Tea Ingredients
1 vanilla bean, split and scraped
2 cinnamon sticks
2-inch piece of ginger, peeled and sliced
5 whole cloves
2 star anise
24 green cardamom pods, split
1 black cardamom pod, split
2 tsp. black peppercorns
1/2 whole nutmeg, roughly chopped
1/4 tsp. fennel seeds
Preparing Spices
Bring about 1 quart filtered water to a boil, then pour over spices and cover in a separate container.
Let steep for 15 minutes, then strain to remove spices. Cover tea and keep chilled until used.
I blended in about 2 cups (473 milliliters) of this liquid in the 5-gallon (19-liter) batch. But you want to do it slowly, mix it well, and taste it. Different people have different tastes, so you're looking for a nice balance without being overpowering with the spices.

Notes: there will be a lot of waste so for best results use a 8 gallon fermenter. My recipe is made for my system that uses pumps,filters,hoses, so scale down for yours if necessary, your going to want to add extra wort for the massive hop losses or you'll end up short
crush semi course to prevent stuck sparge from all the weight and run your pump for 1 to 1.5 hours or 1 hour recirculation and 1 hour slow sparge
whirlpool at 0 after last hop addition until temp drops to 180 then cool
your going to need a 4L starter with 2 yeast to start with
Start with extra water and Boil for 120 minutes or until you reach your normal level.
boil 120 minutes then start your hops and 60 down to 0.

Pale malt 89%
Enzymic (acid?) malt 1%
Crystal malt (variable, for colour) 4.5%
Malt extract (in mash) 3%
Invert 3 (sugar, in boil) 2.5%
Hops – Fuggles (70%) Goldings (30%) to achieve 30–32 IBU. (Manual prescribes a blend of different growths to help maintain a consistent palate across batches.)
Water (all water used in the process) – 40 grains per gallon sulphates; 35 grains per gallon chlorides.
MASH at 158F (70c) for 1.5hrs; 1st sparge 175F (79.5c); 2nd sparge 160F (71c).
BOIL for 1h45m, with Invert 3 sugar, Irish Moss (1lb per 100 barrels – so, a teaspoon…) and Fuggles at 1h45m; Goldings at 15m.
Pitch yeast at 60F (15.5c) – Mortlake 114, or a blend of 114 and 118, in case you happen to have any handy; alternatively, a fairly neutral English ale yeast is probably best.
During fermentation, keep temperature below 69F (20.5c).
Warm condition for 8–12 days with dry hops (Goldings) at rate of 1oz per barrel (0.8g per gallon, we think); or use hop extract to achieve the equivalent. Add caramel at this stage if colour is off.
Prime with ‘liquid candy’ (sugar syrup?) to achieve 1.45 vols CO2 in final container. |
