Notes: Shooting for 80% efficiency and 1.070. Lost track during lauter and ran off extra 3.5 gallons of wort. Removed the 3.5 gallons and continued on, hence the lower than expected gravity.

Notes: Note the malt is NZ Gladfield Lager malt, not UK.
Actual OG: 1045; final 1008 and primed with 5g maltodextrin/500ml bottle so actual ABV close to 5%. Fermentation lasted 4 days. Went over 17C a bit but no more than 20C.
Result: Not bad. A bit unbalanced (too hoppy) for such a light body but the flavour of the (superb local) malt still manages to come through. Did bottle 2 x 500ml before the dry hop and thought it tasted better than the main batch. |

Notes: 15 min citra hop addition is first wort hopping.
Initial plan is to use saved yeast from Apple IPA (1275), if the starter does not work then Safale 05 is a backup.
Cranberries will be a week 1 decision. |

Notes: Ragnarok - Norse Mythology : Fate of the Gods
Had an issue with the digital controls on the boil - set us back about an hour.
wlp 300 was unavailable and purveyor substituted wlp 380
we decided to underpitch the 380 and ferment on the warmer side in order to increase the isoamyl acetate esters per the experience below:
GOOD ALTERNATIVE"
By: HopfenUndMalz | Date: Jul 5, 2014 | Beer(s) Brewed: Weißbier hell
Bought this cause my local store was out of WLP300 strain. But as I wanted the 300's banana flavour I used one vial for 40 liters. No starter, no aeration, 25 °C...BOOOOM banana all over the place. In my mind even more than you get with WLP300. On the other hand attenuation went down but that's a price I'm willing to pay. Aroma is less fruity and more spicy. Besides banana there's also hinds of clove and citrus in the flavour (might be the Saphir hops though) plus a very nice acidity.

Notes: Whirlpool for 30 min. total 15 for WP/15 to chill down runoff.
1st dry hop at 3 days into fermentation for 5 days.
2nd dry hop addition 3 days after that for 5 days or until conditioned and ready to keg.
Tasting Notes: Juicy! hazy AF! Tropical aromas of ripe apricots, orange, and pineapple. Pithy, danky, nice spark of bitterness. Will brew this again as it's going fast! |

Notes: So the idea is that the Vienna malt will give the beer an orange colour; the Victory malt will add a toast flavour; the Cascade will give a citrusy aroma; and of course steeping the orange peel will hopefully add the orange flavour.
With luck this will add up to a toast and marmalade theme :-) |

Notes: My 4th itteration. Very delicious. I add two cans of libbeys pumpkin puree to the mash with some rice hulls. I add the spices to the boil for the last minute and let it steep while I chill the wort.
The IBU's seem high, but magnum hops are very clean and smooth.
Entered in a local homebrew contest. Got 4th place!
If i would change anything would be the nutrients. Yeast didnt ferment as well as it should have |
