Notes: spices are added 5 minutes until flameout directly to the boil
1/2 minerals added at mash the other half added during the boil after sparging.
Ferment at 64 then let naturally rise into mid to high 70's to finish.
Total water needed is 20 gallons. Mash strike temp is 9 gallons at 172. Sparge at 170 with the other 11 gallons Use Herms to keep mash range at 157 for 75 min.

Light in color and fizzy, this pilsner is quite sessionable and more about the hops than the malt, but not in an unbalanced way. Agnus hops give a lemon scent and a very low proportion of herbal scent, late and early variety Saaz hops bring mild, earthy, herbal, and spicy flavors. |

Notes: This is Hapless Ginger Brew´s recipe. I´ve scaled it for a 10 liter batch to test it out.
230 G of Demerara sugar caramelised with a dash of lemon juice & 500ml of the wort, then added at 15mins. (Flame out and leave before adding - stir well and flame on for remaining boil)
All dark grains added at mash out - 77deg - 20mins
Cocoa Nibs soaked in vodka for 5-7 days |
