Notes: 2024-02-11 People still remember this beer a few years later. The boil down on the stove of a gallon of wort makes a huge difference. Gives it a huge amount of flavor, be careful not to burn it. (BrewDay Edit: boiled down in a large pan for about 40 minutes, got it to about 220ºF when it looked like a thick pancake syrup and had darkened considerably) Because it wasn't too far, it redissolved and didn't burn to the bottom of the kettle, lots of stirring.
I'm lazy this time and grabbed 3 packs of OYL-015 Scottish Ale instead of doing a starter with WLP-028. Going to triple the amount of yeast nutrients and oxygenate on setting 1 (Blichmann regulator) for a few minutes to get it good.
Also adding 5 g ascorbate to mash for oxidation protection (gosh this doesn't make sense with oxygenation, but it seems to work in NEIPA so why not everywhere too?)
Also, also, the original had a "light and malty" water profile so I switched it up to Edinburgh. Not paying attention to the carbonate, but needed slaked lime to get the calcium up, which means I need more acid to balance it. Aiming for a mash pH of ~5.4.
Created a 2 L 1.060 Pils DME starter (1L in each 1 gallon jugs) and applied the Shaken Not Stirred approach.

Starter:
342 g Briess Pils DME
2L distilled water
one ball of CaCl2
pinch of Ca2SO4
pinch of NaCl (table)
pinch of yeast nutrient
1 Pack of WLP028
7 pellets of EKG
Boiled then cooled to 70ºF with ice water bath in sink
~18 hours @ room temp (~60-70ºF)
Post mash, pull 1 gallon of liquid and boil that down in a shallow frying pan while you boil the main pot. This will create massive MRPs and flavor. |

Modified recipe. It produced great beer, but I'm adjusting my system from 6.5 lb of grain to 8 lb, and the efficiency needed to be raised from 60% to 72%. I also want to tone down the alcohol a bit, because I want to drink too much of this beer and I'm just getting drunk.
Was OG 1.066, FG 1.011 (7.24%), IBU 76.26, SRM 6.78
The C20 was 12%, I should keep this. I think just below 7% would be good. It needs a strong backbone to carry the hops. 2 packets of yeast should be fine. I'm also trying to trim costs.
I noticed I was a little low on the bittering hops so I bumped up both from 1 oz to 1.2 oz. now IBU 91 |

Notes: 6/20/15: Just took a sample of this funky BIAB experiment in SMaSH beer... 100% rye and 100% Amarillo hops. Haven't commited to the dry hopping yet (probably will start it next week when we'll be bottling our biere de garde) but this is a very bizarre product thus far. The nose is funky, lemony and very rye-forward (obviously) and the taste is slightly tangy, fruity and orange-heavy with a big citrus blast. Refreshing and surprisingly heavier bodied than expected. Excited to dry-hop with a dose of more Amarillo than any of the other additions to see how "extreme" we can get with this little guy. Should get about 9-10 bottles total out of this batch.
10/17/15: This has actually turned into quite a nice little beer for such a dumb experiment (SMaSH BIAB beer). Full disclosure, I dry-hopped it with basically everything we had remaining in the fridge at the time. I think there was some Motueka, Mosaic and Target in there, and who knows what else. Anyway, it's really good surprisingly. Very, very hoppy and well=carbonated with some weird plastic-y notes (that aren't "bad" actually and seem to work decently). The rye is definitely spicy, chewy and earthy and the hops are bright, fruity and juicy with some floral and grassy notes. Good stuff. Kinda proud of this little 8 bottle batch. |

Notes: This is basically the NB recipe for St. Paul Porter, but swapping Chinook and Vanguard hops for the kit's Cascade and Cluster. I was going for more of a Troeg's Dead Reckoning and it worked. Brewed 5 gallons, had a dinner party with 3 couples and pretty much finished the whole batch in a night. Needless to say, a good time was had by all. Will brew this every October for December drinking. |
