6 ounces of coarse ground coffee, 30fl oz of water steeped for 18-24 hours, then filtered.
Add cold brew to keg and rack beer on top of cold brew.

Notes: Lactobacillus Brevis pitched with yeast. One packet of yeast adequate for the 3-gallon recipe. This is a Kottbusser. Will ferment at 68 degrees, allowing the yeast to rise in temperature after 48 hours. Use Lacto Delbrueckii for next brew, kettle sour to pH 3.8. Modified from reference to move to a more "table strength" brew.

Notes: Original recipe was based on Ed Wort's Haus Pale. I bumped up the hops in my last batch (See Dustin's Folly IPA). I liked the hop bump, but the beer was too cloyingly sweet, I suspect from the crystal. I like a dry finish in my IPA so I think this recipe could benefit from a small addition of cane sugar, an extra 1/2 lb of two row, and an extra 1/4 lb of vienna to help balance the extra abv.
Recipe uses a bunch of 2 year old Citra and Chinook hops I had sitting in my freezer. Citra used to be 13.7% AA. Chinook used to be 11.5% AA. (aa calculator - http://brewerslog.appspot.com/HopAlphaCalc)
Aerate to approx 12ppm prior to pitching yeast by turning on pure oxygen with a .5 micron airstone for 60 seconds.
Chill and fine with 1/2 tsp gelatine to drop haze. (Procedure here - http://brulosophy.com/2015/01/05/the-gelatin-effect-exbeeriment-results/)
Should be grain to glass in 1 month. Drink fresh.
Tasting Note. Turned out great, Very floral. Floral drops off quick as is expected for an IPA. I will brew this again.
