Notes: Steep grains in 2 gallons of filtered water -- heat and maintain 158 degrees for 30 min. Rinse with 1 qt of same temp water.
Add LME -stir to dissolve fully. Add the balance of water and bring to boil. Add hops according to schedule. Chill to at least 78 degrees and pitch yeast. Aerate 20 seconds of pure Oxygen. Ferment at about 67-68 degrees
After 4-5 days add "dry hops" to 2 cups of boiling water and stir into the primary fermentor. After another 5-7 days transfer to secondary, add gelatin to clear. Bottle or keg in another week using 3/4 cup bottling sugar.

Notes: Add wheat malt at end of steeping and cool to 110-120 F (46 C). Steep 3 oz (80 g) of pilsner malt in a bag for 1-3 days, or until desired sour flavor has developed. Then boil for 15 minutes with hops.
Make sure to sterilize steeping bags before use.
I steep using 2.5 L of water, and souring is done in a zip-lock bag, with air squeezed out. Bag is submerged in a water bath with temp maintained with a sous-vide wand.
Normal BE recipes use uncracked grains. I used the remainder of my cracked ones, because I had them. |

The other thing step mashing allows is for rests at the optimal temperatures for beta amylase and alpha amylase as well as a controlled temperature ramp from the beta rest to the alpha rest. This to me is the real key to step mashing because it gives the brewer the ability to increase wort fermentability. Most highly dry beers have a long rest at 140 °F (60 °C) for beta amylase and then a slow ramp up to 158 °F (70 °C) for the alpha rest. The result is an increase in wort fermentability as compared to infusion mashing at a single temperature. |

| Notes: Light and crisp. The IBU’s are on the low side, but there is a nice sweet/spicy balance to the beer. The great fresh taste of a craft ale with an extremely clean finish. This reminds me of what a local craft brewery might come out of the gates with to win over a new market. Very drinkable with wide appeal. I’ve yet to have anyone, even BMC drinkers not say it’s one of the best beers they’ve tasted….period. The secret lies in the name. I moved through Northern Brewer, Nugget and Pearle hops, all in combination with Cascade. Even went with a strict Cascade hop bill, but was just a bit on the tart side for this lighter grain bill. |
