The hops are very close, for brighter hop flavors use more at flame out and dry hopping. As much as you are willing to buy! Use Maris Otter if you can not get Simpsons Golden, it's very good too! BIAB style I mashed the 8lbs of grains in 4 gallons for 75 min in a bag at 152 degrees. Then drained grains and poured 1 gallon of 170 degree water through them. I did a 20 min hop stand during and before cooling.

Bottle and age at 50°F for 3 weeks. The caramel and dark malt notes are well balanced by Goldings hop flavor and bitterness. There is a mild syrupy, molasses aftertaste that is pleasant, especially with the roasty notes.

This West Coast IPA is sure to be a hit with East Coast hop-heads. This is a GREAT beer!!

I tweaked a recipe from ChemE just a little to increase the ABV. I just finished one of these, and I have to say that this is probably the best beer I've made to date.

Add water until volume is 3.5 gallons. Boil 45 min and continue to follow hop schedule until flameout. Wort chill until temp is under 70, transfer to primary and top up to 5.5 gallons, pitch yeast, and ferment for 7 days. Transfer to secondary and leave until fermentation is complete. Add Gelatin 3 days prior to bottling to clarify beer. Bottle and condition at room temp for 21 days. Enjoy!
