I package of each. Starter didn’t start in time. OSG 1.058. Could have been better, 152 degrees and held but the 12 lbs of grain we bought cracked from brew store was pulverized. Left the second whirlpool hops in wort while cooling down. 24 hours 4 ounces each of ElDorado and Mosaic.gravity on Tuesday (3days) was 1.014 added 4 ounces each of same hops. Tasted it and it was delicious. Thursday we Crashed with our glycol chiller to 38 degrees and kegged Friday night. FSG was 1.012 6% ABV. This beer is bright orange, great hops smell, very juicy and smooth. Hops stay in mouth and dissipate before swallowing. No hop bite just awesome fruit. Notes of melon, tangerine, and stone fruit. One of the best best NEIP we have ever made. This will be our flagship beer. I regret not washing this yeast! And why are my photos sideways. Update, huge pineapple after 2 weeks, color is awesome and so is the taste. Too bad it'll be gone soon...sigh

The equivalent of 20mls / 100#s of grain is enough. Add the enzyme 1/3 of the way into mashing to ensure the mash isn't too hot to denature the enzyme. Stir very well and let the mash have an hour-long rest to let the enzyme do its work." "The other option would be to add the enzyme to the kettle while lautering, then hold off on heating the kettle until all wort is in and has 30 minutes of contact with the enzyme at around 145 degrees (lower would be fine, too)." "The enzyme will denature in the boil, but it's already done its work." "That would all mean that the amylo in the fermentation is no longer needed. I'm finding better results with fermentation character and hop aromatics by having no enzyme present in the fermentation." Lastly, it is very important to add nutrient to the boil as well as 1/2 way through fermentation (with something like BSG's Startup) since the wort will be almost entirely glucose, there is not a lot of nutrition for the yeast.

Use fine-mesh grain bag to minimize pumpkin getting into the wort. PREP PUMPKIN - Use pie pumpkin and/or butternut squash (if brown ale) about 10 pounds in total weight (to yield 3-5 lb net per 5-gallon batch). - Halve the pumpkin, remove pulp and seeds, and cut the halves into pieces about 6 inches long. Arrange the pieces on a foil-lined cookie sheet, and sprinkle them liberally with brown sugar. Roast in the oven at 375°F until soft (approx 1.5-2.5hrs). During roasting, the brown sugar will melt and caramelize onto the pumpkin, providing extra flavor. Remove from oven and let cool. Peel off the skin, dice into large cubes (being sure to save the juice for its color and flavor), mash to a pulp, and store in a covered bowl in the fridge. On brew day, let the pumpkin warm to room temperature. MASHING - Don't leave heat on after meeting mash-in temp (163) - Take about 1/2 gallon of the hot mash water before adding grain, add it to the pumpkin and stir to break up big clumps, yielding a slurry. - Add all grains and stir, then add warm pumpkin slurry to the mash. - Test pH after 10min...see Water Chemistry section. - Mash-in will likely drop temp by 6degrees - Mashing will likely drop temp by 10 degrees per 60min - Range goal is 156 - 141 during the 90min mash BOILING - After sparging and while boil kettle heats up, move mash bag to over spare kettle, squeezing & letting drain. Add additional wort to boil kettle. - Ferment in basement to keep room temp around 70degrees.
