Notes: If bottling with champagne corks and cages:
Set floor corker to its highest setting, insert the cork into the bottle, then using your foot push down the bottom support. the bottle will be suspended by the cork because it hasn't fully passed through the corker. Adjust the corker or use some sort of skinny tool to push the cork the rest of the way through. Don't twist or pull it out as that will damage the cork.
Don't use diskless cages, the corks will just go right through them.

Notes: Mill the grains and mash at 156°F (69°C) for 30 minutes (or as long it takes to pass the iodine test). Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 168°F (76°C) water and top up as necessary to get about 6.6 gallons (25 liters) of wort—or more, depending on your evaporation rate. Boil for 75 minutes, following the schedule for the boil hops.
After the boil, chill the wort to about 64–66°F (18–19°C). Aerate well, add the yeast nutrient, and pitch plenty of healthy yeast. Ferment at 68°F (20°C) until it reaches final gravity, then give it 2 more days to clear diacetyl. Chill to 42°F (6°C) if possible (if not, proceed at 68°F (20°C), but reduce the oak chips by half). Prepare and sanitize a secondary fermentor and place the oak chips and whole-cone hops in a weighted hop bag. Purge the secondary fermentor with CO2 before racking beer into it and adding the first round of dry hops. If possible (i.e., using a conical), dump the cone after the first 3 days, then add the second round of dry hops. After 3 more days (if possible), dump the hops again. Allow up to 2 weeks to clear diacetyl (see below), then crash, package, and carbonate.
BREWER’S NOTES
Very important: On the day of the first dry hop, take a gravity reading of the beer and note this in your brew log. This exercise will be particularly helpful as it relates to hop creep. Three days after the second dry hop, take a gravity reading and note it. Do the same the following day. Once you go 2 days in a row where your gravity has not dropped from the secondary fermentation from hop creep, you can proceed with bottling or kegging. Depending on your conditions, you might have to wait up to 2 weeks to clear the diacetyl from hop creep. About those bittering hops: There is a limit to how much alpha acid can be isomerized in beer and also to how much can be perceived. While the calculated IBUs for this recipe might be about 195, a spectrometer reading measured them closer to 80. (The yeast also take up a large portion of isomerized alpha acids, which is why the yeast from an IPA fermentation tastes so bitter.) |

Notes: Milled on 2-roller at 0.38mm.
100% RO water, OpH was 6.0, added 10 g tartaric/malic blend and dropped too low to 5.1. Had to add 12g of calcium sulfate(gypsum) to get back to 5.2.
Mashed for 30 minutes by the time the pH was adjusted. 90+ minute mash given the extra time fussing with the pH adjustment.
Conversion efficiency basis 5.5 gallon/1.065 water pre-sparge = 88%...post sparge/actual conversion efficiency = 5.5 gallon /1.062 post-spare/pre-boil = 84% preboil efficiency.
Given electric coil stovetop heat source, kept lid on a couple times to build a vigorous boil but lid off 90% of boil.
Pre-ferment SG around 1.070. Wort aeration via swirling the siphon hose for maximum disturbance. The screen on the ball valve had clogged again from all the coagulated proteins and plant matter.
Yes, FG of 1.015. Took twice as long as Room Temp for fermentation dropped to 60F. Moved to corny keg for secondary/dry hopping with 1.5 oz hallertau. 2 days with warming wrap on it to bring up to 75. Additional fermentation occurred. Cold Crashed 2 days at 36-38F. Force strained with 5 micron filter. Very dry with pleasant sweet, subtle clove from the hallertau. The bitterness seems more pronounced as it has less sweetness in the beer to balance. |

8 gal of strike/mash water needed at 160 deg F.
Add grains in bag, stir and steep for 60 min.
Wrap kettle in towels and keep covered. Temp should stay consistent around 152 F. After mash, turn on burner, stir grains and get temp to 170 F. At 170 F, cut heat and let set for 15 min.
Remove grains and let drain into kettle.
Start 60 min boil and hop addition.
Stir a whirlpool and let stand 30 min.
Finish cooling wort with chiller to 77 F and pitch yeast. |
