Notes: Easy to make, comes out clean and has a smooth body, somewhat dry
NOTES:
For yeast, I use 1 packet of Wyeast Cider Yeast 4766
Indian Summer Apple Cider is the preferred apple cider if using store bought. (Uses Vitamin C)
DIRECTIONS:
Add remaining apple cider to fermenter along with sugar. Oxygenate cider and add yeast packet. Stir together and cap.
Stir cider on second day to degass. Check gravity after 4 days, stir again to degass. Once stable, transfer to secondary, and let sit for an additional 2 weeks. Should be clear. After two weeks, add hops and dryhop for 7 days.
Cold crash for 24 hours, add to bottling bucket with dextrose priming sugar. Use priming calculator for exact amount.

| Notes: I soaked the seeds for four hours then mesquite smoked the hemp seeds in a mesh bag for 2 hours. Crushed the seeds in the bag and steeped with the grains. Get a real earthy taste and a lot of smoke - you have to love a smoked beer to like this - needs at least 4 weeks aging in the keg. Good sipping brew - and quite the novelty. Notes: Steep grains in 1 gallons of water at 155ºF for 35 minutes. Rinse grains and remove.
Add 1 gallon of water plus the dry malt extract and bring to a boil.
Once boil begins, add the hops and other ingredients per addition schedule.
Add Irish moss with 15 minutes left in the boil.
Cool the wort to 75ºF and add enough cold water to primary fermenter to make five gallons.
Pitch yeast and aerate well. Ferment in primary for 5 days.
Rack to secondary. Add dry hops per hoping schedule and add sweet orange peel (sanitize with vodka). Ferment for an additional 8 days.
Rack to bottling bucket with priming mixture and 2 ounces orange extract.
Bottle and condition in bottle for at least two weeks. |

Notes: Add juice of lime(s) to 3 cups of water, bring to a boil then turn off heat. Steep teabags for 7-10 mins, cool for a few mins then add to carboy. Add nutrients and juice into carboy with an aggressive pour to help aerate the juice. Add yeast, put an airlock on then place in a cool (60F-70F) environment.
Primary for one month, then rack to secondary, topping off with juice. Leave in secondary until crystal clear (usually 2-3 months or so from pitching) then bottle with 4oz priming sugar.
Takes about a month to carbonate, tastes good after 3 months, but just gets better with age. I usually start opening bottles about 5 months after pitching.

| Notes: This Brew uses a reverse hop method it really screws with calculators and they wont give you a an accurate reading of bitterness but the beer turns out great. At the end of the boil add your Aroma hops and whirlpool. Let your kettle settle for about 15 min before cooling. When your fermentation starts to slow crush your dry hops to a powder and stir in. This is a great tasting beer I give it a 3 out of 4 stars and the girls can't seem to get enough of it. |
