Notes: Trying to dial in a Red IPA recipe. Was going to use Celebration recipe but got only enough C60 and aromatic malt for a 5 gallon batch. Subbing some other malts to get to a 15 SRM to hopefully get brilliantly red color.
Using Cryo Columbus to bitter and Simcoe and Centennial for flavor and aroma later additions. Dry hop with Simcoe and Centennial Cryo. Will dry hop after a soft crash following post fermentation and clear force diacetyl test. Stay on hop for 2 days then crash and clear. |

90 minute mini mash
30 min hop stand at 55-65 C.
pitched 2 packets of oldish m29 at 25C, into chilled bath 17C.
Foil over top of fermenter.
Monday morning 23 Nov removed from bath, 6 pm 22.5C, 8 brix=1.019, put temp controller on to 23C. Tues 7:30 am 7 brix=1.013, upped temp controller to 24C.
Weds am 24C looks like 6 brix=1.007, Weds PM, looks like 5 brix=1.001, replaced loose foil with secured cling film.
6.5 litres into flagon with brett in linen cupboard. Bottled 5.7 litres 10 Oct 2021. |

Notes: Made a Lacto Plantarum starter on 5/31/17. 200g DME in 2 liters water, boiled for 5 minutes. 10 pills broken open and pitched into the starter after the wort cooled down to 92ºF. Each pill had 10B cells for a total off 100B in the starter. Starter topped off with seltzer water to purge oxygen in the head space. Initial pH was 5.39. Final pH of starter was 4.51.
Initial pH of the wort after pitching the starter was 4.51. We pitched at 12:30 pm and held at 95ºF. By 9 pm, the wort was down to pH 3.73. At 9 am, the wort was down to 3.51. By 12:30 pm (24 post pitch), the wort was down to 3.43. Due to time restrictions, I decided to call it there and finish the boil. |

Aged 2 years in bourbon barrels. Original recipe calls for a 9-hour boil time. But the Brewer's Friend program kept marking it as an error. The beer pours a very dark color almost like an imperial stout. Some of the color comes from the two years left in a Bourbon Barrel but a good amount comes from the long boil for sure. Since the single grain used is Halcyon which has a 2 SRM almost no color comes from the grain. |

Notes: NB: drie dingen waren kut aan deze opschaal brouw dag:
1) 2.5 L/kg is te dik als maischdikte. het is echt flink omscheppen aan het begin (later was t wat minder erg).
2) 10 kg mouten plus 25 liter water werd meer dan maisch in de pan dan onze pan aankan (pan heeft of 30 of 32 L inhoud, effe vergeten).
3) Wsl door gedoe met maischen, en sponswerking van de bostel, kwam ik op lager SG uit dan ik had gehoopt van mn afgekoelde wort in het vergistingsvat (wat nog verder aan zou moeten worden gelengd tot 40 L). Je eindigt met minder liter bier want je lengt niet tot 40 L aan maar tot je beoogde SG is bereikt.
OUD
22 liter maischwater, 5 liter spoelwater, 10 liter koelwater. 37 liter gebruikt, 9 verloren = 28 liter wort
BATCH 1
Update: circa 20 liter na spoelen. 22 liter inmaischen + 5,5 liter spoelwater = 27,5 liter water. Maischen en spoelen verliest dus circa 7 a 8 liter water. Dit keer 12 liter bevroren water gebruikt. Was te veel ijs! Voortaan 8 liter stijf bevroren water en 4 liter koud? Geen schaal op gistvat, maar schatting is 4 liter verliezen tijdens hopkoken, maakt 16 liter gekookte wort. Plus 12 liter koelwater maakt 28 liter bier. Vorige keer met stefan Hop Locatie maken gaf met helemaal bovenstaand schema maar 25 liter bier. NA BOTTELEN: was toch maar 25 liter bier (evt 26 liter volume maar laatste beetje niet te bottelen)
Filteren op hoge temperatuur (78grC) van levensbelang! Tweede keer filteren ook aan te raden. Derde keer filteren niet echt nodig, levert weinig op.
BATCH 2
22 liter inmaischen
-11 liter verlies maischen spoelen filteren
+9 liter spoelwater
20 liter gefilterd wort
-5 liter verlies koken
+1 liter kokend water toegevoegd
+12 liter koelwater
28 liter bier. Lijkt in de ton iig redelijk te kloppen. Kijken hoeveel er uit komt met bottelen... (EDIT: na bottelen: ongeveer 25-26 liter was te bottelen)
10,5 liter bevroren koelwater op 16 liter hete wort was te veel. 1,5 liter koelwater uit koelkast. Volgende keer wat meer spoelwater gebruiken (10L?) en beter bostel uitwringen, proberen uit te komen op circa 23 liter gefilterd wort. Eindig je met ongeveer 18 liter wort. Dan iets van 6 liter bevroren water plus 4 liter water uit koelkast.
Filteren met drie parallelle emmers ging top vandaag. Elke keer even herverwarmen in pan. Derde keer filtreren wellicht niet nodig, bleef maar zeer geringe hoeveelheid meuk achter.
VOORSPELLING OPSCHALEN
had eerst 45 L, maar dan kom je op maischdikte iets van 2l/kg. dat is te dik. heb t nu aangepast naar 25 liter inmaischen (wat wel maximaal lijkt, anders stroomt de pan over). Dan kan ik dus max 10 kilo mout eraan toevoegen. Voorspelling:

Notes: I cold-steeped the dark grains overnight, and added that dark wort to the boil. I caramelized the craisins in the oven at around 350ºF for 15-20 minutes, and added them right into the fermenter before adding the wort.
I bottle-conditioned this beer to 2.8 volumes in Belgian bottles.
I played safe with the yeast since it was the first time I was using it, so I fermented it in my basement at around 64ºF for around 10-12 days, then racked to secondary and let it sit for another 10 days. In my new version I let it rise to high 70's ºF to see how flavors develop.
Overall impression: Although it has all the characteristics of a saison, it was probably a little bit off the style. I would have liked the yeast were more expressive and dried out the beer even more (it ended at around 1.009-1.010). That's why in the new iteration I used pilsner malt and French saison yeast, which is supposed to attenuate even more. I also let fermentation temperature rise freely to the high 70's ºF. In the new version I used one pound of craisins. |
