Notes: Mash target pH 5.4
Acidifying sparge water with citric acid to pH 4.4(ish).
Trying to ensure pH of under 4.6 for fermentation.
Using glycerine at a ratio of just under 3ml/L to improve mouthfeel, after fermentation ends (with dry hopping).
Using a wider gap on the grain mill to get a poor crush.
Doughing in at 165 to convert mainly non fermentables.
Mashing for only 30 minutes.
Aiming for an efficiency of around 41% |
