It came out great; had the structure, tiny bubbles, color, flavor up front but I realized that they add Brettonomyces to the secondary. Notes: Dough-in protease rest at 122F for 45 minutes.
Saccharification-1 temp to 147F for 60 minutes.
Saccharification-2 temp to 162F for 20 minutes.
Mash out at 170F for 15 minutes.
90 minute boil.
Add Blanc Soft Sugar at boil hot break.
Chill to 64F. Pitch yeast. Pure O2 via 0.5 micron diffusion for 60 seconds. Ramp primary up to 76F over 6 days. At 1.013 dump
primary yeast and chill to 50F for 4 weeks. At 1.012 bottle prime in heavy bottles with Simplicity Candi Syrup at
34g/gallon and a fresh re-pitch 400ml starter. Hold bottles at 72F for 2 weeks for initial carbonation. Cellar for 3 months. |

Notes: DIRECTIONS
Do a single-infusion mash at 149°F (65°C) for 75 minutes. Raise the temperature to 168°F (76°C) for mash-out; lauter and sparge to get about 6.8 gallons (25.7 l) of wort. Boil for 90 minutes and whirlpool, following the hops & additions schedule. Chill to about 68°F (20°C), aerate the wort, and pitch the yeast. Ferment at 68°F (20°C). When fermentation is complete, add the spices to a small amount of 195°F (91°C) water to sanitize and add to the beer before packaging or wood-aging.
BREWER’S NOTES
Try aging the beer with oak cubes that have soaked in whiskey combined with honey or maple syrup to approximate Odd Side’s barrel-aged version of the beer. |

In protest against the potential withdrawal of the USA from the Paris agreement, we brewed a saison (which ferments at high temperatures) with melted ice caps (glacier water) and cloudberries (an Arctic berry). So your homebrew shop of choice may not stock all the ingredients here! You can buy cloudberry jam and add that instead. The pectin in the jam is not ideal and will form a haze but that can be forgiven in a saison.

Tim felt non-dryhopped version was too gingery, however, dry hopping seemed to offset the ginger in a good way - either cut ginger down, or dry hop entire batch.
