Notes: Mashed in at 71.5 for 60mins. Final mash temp before mashout 65c.
Mash out at 77 for 5 mins. Around 12 to ferments with an OG of 1.061.
Gravit of 1.017 adjusted on 6/7/16 - same on bottling day: 18/7/16
Nice enough at bottling. Could be roastier, choclatier and have more body - bigger all round next time.

Notes: You want a high CaCl for this style. My water goes like this, and should be a safe bet if you havent tested your water (per 5 gallons):
3g CaCl
3g Gypsum
0.5 g Epsom Salts
If the pH is too high, this usually means adding acid malt (~1% of the grist for every intended .1 drop)
If the pH is too low I add chalk (which should ideally be dissolved in carbonated water first) or baking soda (which can be added directly to the mash).

2.4 AAU Hallertau hops (5 min.) (0.6 oz./17 g at 4% AA)
1) make 1L yeast starter -- start 3 days prior to Brewday time
2) add Fermcap prior to boil
3) add Whirlflock 15 mins before end of boil
4) add PMB when kegging
***
Recipe partially based on BYO Replicator Recipe by Steve Bader -- https://byo.com/recipe/theodore-hamms-brewing-company-hamms-clone/ . With one main change I made to use flaked corn instead of brewers corn grits, since grits must be cooked to gelatinize the starches and then added to the mash. Flaked corn has already been gelatinized, so can go straight to saccharification rest. |

Notes: This last brew after 3 weeks in the bottle is so close to what I was looking for I think it's dead on for style and taste. Another week or two will improve it I'm sure. I started the fermentation temp at 65° after four days raised it to 74° over a period of 9 days
1) When I last brewed this I did not have WLP400 so I used Wyeast Belgian Witbier 3944
2) Next brew will bump up the Grains of Paradise to 2 grams
3) Slightly toasted the Coriander on the stove-top before crushing
