For Spice Mix:
4 vanilla beans,
1 cinnamon stick,
1 dried ancho pepper
1 dried pasilla pepper
1 dried guajillo pepper.
Split and scrape vanilla beans. Chop peppers, discard loose seeds. Add ingredients to mason jar and fill with spirit of choice. Shake daily allow to soak for at least a week.
Strain and add spice mix to taste in secondary.
Add habanero puree a couple of ounces at a time until desired heat is reached. |

Intense spicy and citrusy notes backed up with a bitter edge and a warming but dry malt biscuit backbone. This beer comes into its own after cellaring cool for a few weeks. Brew twice as much Belgian Tripel as you were planning on ageing - it's awesome on its own too!

OG was extremely low 1.023
Boiled for an extra 15 min
- Same hop addition except for the 60 min, switched to 75min
Reasons for Low OG:
- pH was high 5.67
- Sparge was not mixed enough
- Lautering was to fast
** Did not wait long enough for all of the wort to be removed from the Mash**
Gravity after boil was 1.037
Roughly 16-17 liters
Airlock was not sitting in place had to tape in down

Steps
1. Mash in at 145°f for 60 minutes; if hops have to be used, then make sure to add the hops to the mash.
2. Bring the wort to a boil and then turn the heat off (no need to boil for more than 15 minutes).
3. Adjust PH ~4.2 to limit growth Clostridium butyricum and other potential off-flavor bacteria.
4. Chill the wort down to 95°f, add Lactobacillus, and allow it to sour for 24 hours.
5. After the souring phase, chill the soured wort down to ~70°F and pitch sacc yeast and brett.
