Notes: Mash for 45 mins for full conversion at low mash temp, stirring every 10 minutes. Then recirc to hit 165 F then start lautering.
1 tbsp fermcap prior to boil
Hot side hop amounts are per 3 bbl. Dry hops are per 6 bbl.
18 g whirfloc with 15 min left in boil, mix in 1 pint water before adding
15 g yeastx-82 with 15 min left in boil, mix in 1 pint water before adding
Whirlpool 10 min, let rest 15 min before knockout
get batch 1 to around 50 F. Add ALDC directly to FV.
Knock out batch 2 to target 68F for start of main fermentation.
When at 68 F, pitch harvested US-05, if we have some less than 2 weeks old, or otherwise pitch 2x 500 g packs of US-05. Oxygenate for 45 min at 1 L/min.
when 1 plato from predicted FG, shut blowoff and increase temp set point to 75F.
When gravity is stable 2 days in a row and passes diacetyl test, soft crash to 60F
1 day after soft crash to 60F, dump yeast and add dry hops.
after dry hopping, when gravity is stable 2 days in a row and passes diacetyl check, crash to 32F and add 500 ml biofine, 20 g antiox-C, and set c02 to 16 psi
when beer is clear, adjust c02 level to target 2.6 volumes and package |

2nd itietarion, same mash & sparge, hopped with warrior .5 oz, long boil 90 min, dry hopped with 1.5 oz of citra, 1oz of amarillo
got 1.069 as starting gravity, this was fuckin delicious, super hoppy, almost NEIPA with the soft mouth feel
only had 8.76 pounds of pilsner, mash temp was super low at 136, raised it up to 146, then 150. put 2oz of saaz for 40 minutes, centenial for 20 min, & then 1oz of citra, centenial & .5 of cascade
S.G. 1.062 on only 5 gallons though
4th interiation - 10/29/17, lactobacillus version, ibu of 4 from 2oz of Saaz at 5 minutes. very littel sour at bottling date of 12/20/17
5th interation 1/11/18, using cellador, lsot abbey, and sante yeast plus yeast bay, starting gravity 1.06, ibu of 26 - bottled 2/11/18
6th iteration 1/21/18, 9.8 pounds of pilsner, bittering to 22(hopefully) based on 5.0 alpha acid. Gonna add oxbow if it smells good. 1.064 sg, yeast bay, melange sour blend, oxbow dregs. bottled 3/23/18, dry hopped with mosaic
7th, forgot the flaked oats!!! fuck my life. O.G. at 1.058 forgot to add hops so i added much later oh well well seee. trying to lower the O.G. cause it can come out at little sweet at times. 6/11/18

Notes: This is a recipe long in the making. I gave my dad a custom homebrew beer for his birthday, and he likes strong specialty beers. And he wanted to combine it with his favorite childhood fruit: papaya. What I have learned in my research is that fruit is seldom combined with a strong malty beer like a Belgian Tripel. But what the heck, ey?
I've made a pretty straightforward tripel recipe and will add the papaya when the beer is racked to the second fermentor.
At first the recipe only called for Saaz (45 at 60min, 60 at 30min) but on the brewday I ran out. So I pulled the first hop I could find out of the freezer: Cascade. What the heck! Tried to weigh 22 grams but I overshot to 30 (32 actually). We'll see what it does.
It's brewed, it's in the fermentor, and now we wait! |

Notes: To make Citrus Simple Syrup:
1. Take the peel from 3 oranges / 1 lemon and blanch them 3x.
2. Make simple syrup: 400g of sugar + 400g of water.
3. Add the peel and simmer for 45 minutes.
4. Remove candied peel and dehydrate on low heat for about 24 hours, this will be used in the drop hop stage.
Whirlpool:
Once boil is complete and wort is below 170F, add Citra (3 oz), Lemon Drop (1 oz) and citrus simple syrup for a 20min whirlpool.
Fermentation:
Cool wort to ~68F, transfer to fermenter, aerate and pitch yeast. Ferment at 65F - 68F until SG reaches 1.010. Add dry hops and candied peel for 4 days. Transfer to bottle/keg and enjoy. |
