think this is too little for American market. less sensitive to hops presence due to Philly Sour being hop friendly. Boil for 90 for pils malt DMS reduction. Belle Saison is being copitched to produce a more farmhouse flavour and diastaticus action, as well as allow β-glucosidase enzyme to transform high survivable levels from centennial mash hops to have a high monoterpene alcohol production (gerianol, linalool) with the end effect of highlighting a floral light citrus tone. End result should be a low alcohol slightly soured dry ale that is a base for adding fruits and spices to taste. 10g CaCl2, 5g CaSO4, 24g Lactic 88%. |

Notes: 7 g Indian coriander seed, freshly ground, whirlpool 5 min.
5 g Curaçao orange peel, freshly ground, whirlpool 5 min.
3 g grains of paradise, freshly ground, whirlpool 5 min.
Mash grains at 150° F (66° C) for 60 minutes. Mash out and sparge at 168° F (76° C). Boil 60 minutes, adding first hops 60 minutes before flameout. Add Saaz hops and ground spices at flameout, and whirlpool 5 minutes. Chill wort to 63° F (17° C) and ferment for 7 days, allowing temperature to free rise to 73° F (23° C) and ferment to completion. |

1. Don't overdo the sparging. OG was actually around 1.064
2. Make sure your false bottom stays in place
3. Kettles get heavy when you put stuff in it - don't try to lift a 15 gallon kettle with 9 gallons of brew in it ... there are smarter ways.
4. A kettle screen for outside would be nice.. .Portland gets windy sometimes. Not sure how many oak leaves and pine needles got in it.
Keg after dry hop w/ 1 1/3 cup malt dry extract in about 1 qt water, Boiled 15 min.
