In this northern German style retro altbier, we’ve dialled down the dry-hops to zero, but cranked up the malt to create massive aromas. Toasty, toffee and floral notes duke it out for supremacy in the headspace of your glass. When this all hits your palate, the steely bitterness combines with the rich dry malt and the subtle alcohol warmth in a full throttle attack on your taste buds. Make sure that the boil is vigorous enough to roll. This means that high flavours are active, and undesirable compounds like DMS are not left in the beer.

Notes: Mash the grains at 152°F (67°C) for 60 minutes. Vorlauf until the runnings are clear, then run off into the kettle. Sparge the grains and top up as necessary to obtain 6 gallons (23 liters) of wort. Boil 60 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 60°F (16°C) for 4 days, then let the temperature rise to 68°F (20°C) and hold for an additional 7 days. Allow the beer to free rise from there until 2 days after airlock activity ceases, then crash the beer to 35°F (2°C), bottle or keg, and carbonate to about 2 volumes of CO2. |

I used Lyles Black Treacle for the molasses.
Wow. Big strong, mouthy/chewy flavor. Very good winter beer if you like strong, malty ales. Rich full-bodied flavor with tastes of fruit, (banana, cherry?) No hop flavor to speak of. Tan head. Highly attenuated, dark in color but not black, Hints of Caramel, Molasses & Chocolate.
A04 pub, S-04 or Notty dry yeast can be used also.

General Instructions Mass Temp and Sparging
Mill the grains and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 152 °F (67 °C). Hold the mash at 152 °F (67 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 5.9 gallons (22.3 L) and the gravity is 1.044 (10.9 °P).
Once the wort is boiling, add the bittering hops. The total wort boil time is 60 minutes after adding the bittering hops. With 15 minutes left add the Irish moss or other kettle finings and at five minutes left add the last hop addition. Chill the wort to 68 °F (20 °C) and aerate thoroughly. The proper pitch rate is 9 grams of properly rehydrated dry yeast or two packages of liquid yeast.
Ferment around 68 °F (20 °C) until the yeast drops clear. With healthy yeast, fermentation should be complete in a week or less. Allow the lees to settle and the brew to mature without pressure for another two days after fermentation appears finished.
Rack to a keg and force carbonate or rack to a bottling bucket, add priming sugar, and bottle. Target a carbonation level of 1 to 2 volumes depending on your packaging. Serve the finished beer at 50 to 55 °F (10 to 13 °C).
