Notes: Was originally trying to create an all extract clone of ST 2X IPA. I found a couple of recipies out there that use just Citra and Columbus. I wanted to try for a little bit more pine so Im adding some chinook for flavor, Amarillo for aroma, and will dry hop with the Simcoe. I wrote ST and they sent a little bit of help, but nothing specific...
Have brewed this recipe a couple of times and this beer has become something aprt from the 2X IPA goal. It is really much closer in tast to Victory Dirt Wolf. |

| Notes: Mash start ended up being about 151F. I added half the dark grains at the beginning of the mash and half 30min in to avoid extracting tannins. Forgot to test the temp before I mashed out but the grain bed was at about 147. The mash out of about 2.75 gallons brought it up to about 167F. Added and extra half gallon to the sparge to make up for liquid loss. |

Notes: Attempt to make this IPA red, like a true Aqua Regia! I understand an ounce and a half of black patent might do it. . .my IPA recipes are 6.5 gallons due to the amount of hops that I use.
0 min boil hop = Post Boil Swirl Hops.
Mash at 150F. Kill the flame after the 90 min boil and add the Post Boil hops, swirl, cover and let sit for 60 min. After 60 min, drop the temp quickly, pitch and ferment at 70F for 14-17 days. Cold crash to 40F before racking to secondary. Rack to secondary, let the beer warm back to pitching temperature, and dry hop. I like to rack to a layer of CO2 covered hops (in this case, sack full of whole hops) in secondary. Add the turbinado to a cup of water and boil for 5 minutes, chill and pitch when ready to bottle. Bottle at 70F. |
