Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains, add 3 gallons of water?? Remove pot from heat, add 6lbs LME and bring wort to boil
Add 1oz Centennial hops and boil for 60 minutes
Add 2oz Centennial hops and boil for 30 minutes
Add 2oz Centennial hops and boil for 15 minutes
Remove pot from heat and add 3lbs LME and return wort to boil
Add 2oz Centennial hops and boil for 10 minutes
Add 2oz Centennial hops and boil for 5 minutes
Add enough bottled water to bring the specific gravity to 1.049
Cool wort to 70 degrees
Add 2 packs of Safale US-05 yeast
Fermentation:

Actually used 5 lbs of frozen mango chunks purchased from Whole Foods. I believe Trader Joe's also sells relatively inexpensive frozen mango chunks but my local store was out of stock at the time. I indicated fresh mango in the recipe only because frozen isn't an option.
Added the frozen chunks directly to secondary. No pasteurization or sanitization treatment. The mango chunks caused a stronger secondary fermentation than I expected. Make sure to have a few inches of head room in your secondary vessel. I only kept the beer on the fruit for 10 days. Could have easily taken more but I was impatient. |

Notes: Different from Zelazny's recipe by the addition of tart cherry juice and orange peel. These two ingredients are added to the secondary fermentation along with the vanilla bean and cinnamon sticks.
For the dried cherries, recipe states to soak the fruit in the first 2 quarts of wort runnings for 30 minutes. Strain out the cherries and add the solution to the end of the boil. In a previous batch, I had kept the cherries and added those into the primary fermenter. It didn't hurt and it sure seemed to help. And this works better than adding the dried fruit to the wort.
Recipe states to mash at 152 degrees for 60 minutes. Mash out (sparge) at 168 degrees for 10 minutes. Don't forget to soak the cherries in mash runnings. Add DME and maple syrup when wort starts to boil. Obtain SG. Boil for 60 minutes. Add hops at beginning. Add strained cherry juice at end of boil. Obtain SG.
Chill wort. No additional water should be necessary. Obtain SG. Pitch yeast. Add cherries. Seal and let ferment.
At 10 days or so, transfer to secondary fermenter. Add vanilla, cinnamon sticks, tart cherry juice, orange peel. Let ferment at least two more weeks. Measure SG. If SG is at target, filter from carboy, mix with priming sugar, and bottle. |
