| Notes: I had this sitting in my keg for 15 days just to meld the flavors together, I also used gelatin right when I kegged it and now after 15 days the beer is very good, you can defiantly taste the wheat flavor and the over all body is perfect with a citrus finish, the final gravity is low but the carapils makes the beer a little thicker and just the right texture, I can defiantly say this is a winner |

In reality I mashed in, drank too much and mashed out four hours later... I meant to do a second runnings beer but ended up collecting all the runnings in one pot and had to boil down for four hours to get my five gallons! Not recommended - it turns into a 22 hour brew day.
Hops:
1.5 oz Centennial (8.7%) - added during boil, boiled 90 min
1 oz Amarillo (8.6%) - added during boil, boiled 30 min
1 oz Cascade (5.5%) - added during boil, boiled 10 min

1 pack of Fermentis S-04 Safale S-04
1 pack of Fermentis US-05 Safale US-05
Direct pitch, no starter, no re-hydration - fermented out in 4-5 days!!!

Notes: In the recipe, "grits" means corn meal.
Because I used corn meal, I had to make a separate cereal mash from my main mash. I used the following website for instructions on how to performa a cereal mash:

First, I took 85% of the 2-row and began my main mash as normal (150F). At the same time in a separate pot to make the cereal mash, I took the remaining 15% of the 2-row and all of the corn meal and mixed it with enough water to suspend the grains ("a thin gruel-like consistency"). I heated the cereal mash to 160F, held it for 5 minutes, then proceeded to boil it for 30 minutes. The main mash continues at 150F.
When the cereal mash is done, transfer it into the main mash and hold it at 150F for another 45 minutes.
Sparge as normal, add the LME and brew as normal.
The initial yeast activity was crazy, I had to put the fermenter in an ice bath to bring the temperature back to the desired 70F.

Boil for 60 minutes adding the hops as indicated.
Add the remaining 3 lbs of extract with 10 minutes remaining in the boil (again off the heat)
Transfer to the fermenter.
Top up with enough cold water to reach 5 gallons.
Ferment between 65-69F for 1 week before bottling or kegging. |
