Make this mix: one tablespoon of cinnamon, one teaspoon of ginger, one teaspoon of nutmeg, and a quarter teaspoon of cloves.
Added whirlfloc, irish moss, 3 teasp yeast nutrient.
Use 1.5 teaspoon of this mix and put it in at flamout.

Chilled the wart and measured OG as 1.052.
Pitched 12 hours later.
5/23 - FG of 1.010 reached. Began cold crash to 32 degrees.
Clove ruined this beer. Other than that it would have been good. Some people still like it I guess. |

Notes: Original recipe earned a Silver Certificate at the 2016 National Homebrewing Competition (37 points, one short of Gold), in spite of low carbonation. One judge thought it a bit too roasty and dark, although I think the former might have been the result of the light carbonation. To address both issues, I have dropped Carafa 2 for Carafa 1. AROMA: (6.5/12) Very light hop note, strong grainy/malty note with good retention, very light haze; grainy, hops not as prominent as I expect
APPEARANCE: (3/3) Amber/copper color, large & fine off-white head with good retention, very light haze; nice head, good retention, darker end of copper/amber for IPA, good clarity
FLAVOR: (9.5/20) Strong & sweet malt with very light hop bitterness, balance is more sweet and much more dry than expected, very restrained bitterness in finish; good malty/grainy complexity with some hoppiness - low for a IPA, malty to sweet to bitter flavor, not hop-forward
MOUTHFEEL: (4/5) Medium body, moderate carbonation, light alcohol warming, no astringency; very good
OVERALL IMPRESSION: (5.5/10) A very enjoyable beer to drink, but a ways out of style for an American IPA. The complex malty flavor is very nice to drink: we really enjoyed it; an enjoyable beer to drink but does not really fit into this category very well. We finished the bottle. |

Notes: Maláták: Pale Ale-t kell rendelni, mivel csak kereket lehet, rendeljetek 7 kg-t, oszt majd levesztek belőle.
Ami itt Caracrystal 45L, az nálunk valami CaraCrystal 120 vagy hogy található, rá van írva a zacskójára.
Cefrézés: szokásos 65-67 fok körül (nembaj, ha 63-69 között ingadozik, így több időtok marad palackozni, ha mondjuk felviszitek 68-ra, és hagyjátok lehűlni 64-ig, majd újra)..
Szűrés, máslás: szokásos, megint többet másoljatok, oszt majd lehet pótolni az elforrt levet.

Aztán ott a többi komlózás, sorrendben.
15 percnél (tehát 45 perccela az erős bugyogás kezdete után) 10g Falconer's Flight + a hűtőben levő "ír moszat" mehet bele.
10 percnél 10g Simcoe (bontott), 15g Amarillo
5 percnél 15g Simcoe (ez elfogy, szóval nem kell mérni), 15g Falconer's
3 percnél 20g Amarillo
0 percnél 25g (maradék, nem kell mérni) Falconer's + 15g Amarillo +9g Apollo (maradék, nem kell mérni).

Így nem kell kapkodni, mert azért az utolsó 15 perc elég kapkodós, főleg, hogy elő kell venni a hűtőberendezést is, meg lemosni, lefertőtleníteni.
Marad 50g Amarillo, azt jól zárd le, és majd hidegkomlóra fele-fele mehet. |
