Notes: 1) Will be 7% ABV after fruit addition.
2) Recipe based on Mango Tango with the Mango, Habanero, and all hop additions cut by 50%. Base malt also lowered to achieve a final ABV of 7%. I was able to find the Flying Dog Mango Habanero I was trying to emulate. Mango Tango is much heavier in all categories than Last Mango in Paris. Note I love both beers but they are different. |

| Notes: A quick brew. Place extract in hot water for 20 minutes. Chop three habanero chilies and put in a hop bag. Use gloves. Bring 3 litres of water to a boil, and add sugar, hop extract and the habanero bag. Boil for a couple of minutes. Transfer to fermentor. Add liquid extract. Stir. Fill up with cold tap water (total 23,7 l). Stir again, and oxygenate. Make sure the wort holds about 18-22 degrees C. Pitch two packs of yeast. Add dry hops and passionfruit puree after 3 days. |

Notes: lower pH with lactic acid between 4.3-4.0 before pitching Lactobacillus.
Cool wort between 75 F or 95 F to pitch Lactobacillus.
Purge head space in grain father with c02 after pitching lactobacillus as well as everytime the pH is checked purge it again and cover back up.
After pH reaches 3.4 do a second boil to kill lactobacillus cool down and pitch yeast. |
