Notes: To make Candy Lime Peel Recipe
Peels from 3 limes no pith
Dissolve Equal parts raw sugar/ water 10 oz
add peels to sugar syrup bring to simmer 10 minutes
cut heat let stand for 15 minutes
repeat simmer stand process three times
remove peels Dehydrate in oven overnight
Note : add syrup mixture to wort at flameout
2 weeks primary
1 week secondary add Crushed Candy lime peels + Dry Hops

Notes: Mash in at 122F and hold for 20 minutes. Raise temperature to 149F and hold for 60 minutes. Raise temperature to 158F and begin runoff. If you're unable to step mash, mash grains at 149F for 90 minutes.
Boil for 60 minutes, adding hops as indicated.
Chill to 65F, transfer to fermenter, pitch yeast and oxygenate. Slowly raise temperature to 80F over 24-30 hours.
Primary fermentation should take 5-7 days. Dry hop when activity subsides. Rack off dry hops after 2 days but don't crash. The yeast will continue to break down dextrins over the next week or so. |

Not enough Amber DME, substitute Light DME and Crystal 60.
Pitched over Sour Saison yeast cake.
Modified Michael Tonsmiere's Saison recipe by lowering the ABV and using Michael Tonsmiere's The Mad Fermentationist Saison Blend.
To brew this saison homebrew recipe, steep the milled roasted barley in 1 quart (0.95 L) cold water overnight. Filter through a sieve lined with a coffee filter. Mash at 159°F (71°C) for 60 minutes. Add the roasted barley extract to the wort at the start of the boil. Perform a 60 minute boil.
Chill to 68°F (20°C), transfer to a fermenter and pitch yeast. Hold fermentation close to 75°F (24°C).
For 5 gallon batch - After the initial wave of fermentation is complete add 1 oz (28 g) red wine soaked oak cubes and 25 oz (907 g) dried Zante currants. Store beer between 60-80°F (16-27°C) until the gravity is stable from one month to the next (a minimum of six months). Bottle or keg and carbonate to 2.4 volumes of CO2. |

Notes: Add 1.7 ml lactic acid to mash & 1.6 ml lactic acid to sparge water.
When fermentation is close to complete, rack beer to a secondary on top of the blackberry purée.
To prepare the fruit, rinse thoroughly, pulse in blender for a moment or two, boil fruit gently for 5-10 minutes. Cool to room temp. Put into secondary.
1 liter starter will provide about 232 billion cells. (based on 88% viability) |
