Notes: I reduced the IBUs quite a lot.
I reversed the quantities of amber and brown malt from Ron Pattinson's original recipe.
Substituted mild ale malt for Sussex pale malt.
Used continuous re-circulation throughout entire mash.
Mash Gravity: 1040 at 30 min, 1047 at 60 min. Reduced mash temp to 148 at 60 min, and mashed for a further 30 min. Final mash gravity: 1049 using refractometer. Hydrometer 1040 at 107 F = 1048 temp corrected. Hit the post boil gravity right on the noise at 1068. Mash eff 85%. I miss read recipe supposed to have been 1065, oh well what can I do add water? Know way!
Primary fermentation slowed considerable after 4 days. OG using corrected refractometer reading was 1024. FG is estimated at 1020, so will leave one or too more days and move to corny keg for secondary fermentation for as long as it takes. I expect that this should be at 1016 in a year or so:)
Did not tast overly bitter could have perhaps kept to original recipe IBUs of around 160. Will add 1 oz of finishing hops to corny keg in bag. Corrected water profile so would not be too malty 0.9 ratio. |

Notes: Allow 2 full weeks for primary fermentation and at least 4 weeks of conditioning for best results. The longer the conditioning the dryer the finish will seem despite the sweetness from the malt.
The last brew I gave this 6 weeks to condition and while the initial taste was sweet, the finish was very pleasantly dry, which made this very very drinkable in the best (and worst, since it was gone so fast) ways possible.
Adjust water, periodically if necessary, for 90 minute boil to help eliminate DMS from the Pilsener malt. |

| Notes: The yeast was only 25% viable and really didn't appear to do anything for the first two weeks. I removed it from the fermentor during a cold snap and set it on the concrete in my basement. The cooler temp made the yeast come to life. The ABV in the fermentor was 4.6 so something was happening. The ABV after 1 week in the temp range of 48 - 52 was 6.2. I racked to secondary for 1 day and the beer clarified completely. It was very cloudy up to that point. |

Notes: Amazing nose. Good flavor, but would like more. Might shift the mid hop editions to 15 minutes.
Using a higher balance of chloride to sulfate.
First Dry Hop addition is in primary. Dry Hop 2 & 3 are in secondary.

♦ STANDARD BREWING NOTES:
♫Create 8 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose. Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
WAKE UP!!!!!!
15 minutes – Add immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if fermentation tank nozzle is pointed upwards

| Notes: A quick brew. Whole process took 45 minutes. Fermentables stirred together with 4 liters of boiling water. Cold tap water added. Difficult to get the dry malt extract to dissolve well. It was added after the cold water, due to low OG, and I had to improvise. Fermentation was slow, but the beer turned out good and dry in the end. Great hop aroma and flavour from the Chinook dry hops. |
