Notes: 1st dry hop addition on day 2 of fermentation (1.027/73 deg. F/13 psi). Used 6 nylon cold brew coffee bags with string suspended by running it through the screw-in ball lock post for the spunding valve. Unscrewed the post and dropped it in with very little exposure to oxygen.
4/16/2021Day 5 - Early taste test is encouraging. Similar to Collective Arts - Good Monster. Nice balance between the hops so far. Plan to do second dry hop in keg during crash and conditioning.
4/16/2021 Fermentation Complete - Used Lallemand Verdant yeast and it chewed through this batch in about 4 days. Dry hopped on day 2 during active fermentation. Fermented at 10-12 psi pressure until day 3, then lowered pressure to 5-7 psi for the tail end of the primary.
4/17/2021- Transferred to keg. Cold crash @ 36 F w last hop charge in keg (nylon bag). Blanket of CO2 @33 psi. Already nicely carbonated due to pressure ferment. Separate OG/FG via hydrometer = OG 1.066 FG 1.014 ~6.8 ABV
OG/FG via Tilt = OG 1.074 FG 1.018 ~7.35 ABV - Sample taste test - Heavy grapefruit, a bit of hop burn but very happy with this batch. |

Notes: Mash the White Wheat and German Pilsner malts as normal following the temperatures listed above. Cool to about 115 F and add the acidulated malt. Seal lid as best as possible and purge with CO2 to remove remaining oxygen from mash tun. Let the mash sit at 115 F for about 48 hours or until the pH is lower than 4.5. Then proceed to boil the wort as normal per the directions and hop/spice additions and chill to about 70 F and pitch the yeast. Let the beer ferment for 7-10 days or until a hydrometer reading of 1.010 is obtained. Rack to secondary and add raspberries and blackberries. Leave in the secondary for 3 weeks. Proceed to package at this time. |

Notes: Set hop shot amount to 1 to accurately calculate the sparge water volume.
5ml of hop extract replaces 1oz of a 10% AA hop. (10AA). Or 1ml of hop extract = 2AAU
Add the corn sugar in the last couple of minutes of the boil and mix well to ensure it is completely dissolved.
After flame out begin to whirlpool for 10 - 20 minutes. Cool temperature to 150-140 and hop stand for 10 min.
Dry Hop #1 starts 7 days post brew day
Dry Hop #2 starts 11 days post brew day
Dry Hop #3 starts 15 days post brew day
Dry Hop #4 starts 19 days post brew day
Cold crash for 24 to 48 hours, four days after Dry Hop #4. Dissolve one tsp of gelatin in 1/2 a cup of water by microwaving until the solution reaches 150F. Check every 15 sec and try not go over 150F. Add the hot gelatin solution to the beer and let it sit for 24 to 48 hours in fridge. |

Notes: Step by Step
Mill the grains and dough-in targeting a mash temperature of 152°F. Hold the mash at around 152°F for 60 minutes. Collect first runnings into boil kettle and begin heating. Sparge with 21 qt of 166°F water, collecting wort and adding to kettle until the pre-boil kettle volume is around 6.5 gallons. Take hydrometer reading if calculating efficiency.
The total wort boil time is 60 minutes. Add 3 lbs of Belgian Candi and the bittering hops with 25 minutes remaining in the boil. Add Irish moss and Maltodextrine with 15 minutes left in the boil. Add wort-chiller and yeast nutrient to the boil with 10 minutes left. Add aroma hops with 5 minutes left in the boil. Chill the wort to 70°F and aerate thoroughly. Take sample for hydrometer reading. Pitch one package of Safale-05 into 6.5 gallon fermenting bucket, aerate and airlock it!
Ferment at 67°F until the yeast drops clear. At this temperature and with healthy yeast, fermentation should be complete in 10-14 days.

In Brew Like A Monk, one of the brewers recommended mashing out and sparging no higher than 163°. That way you purposely don't denature the enzymes and conversion continues until the boil starts. If you're mashing at 146°, you're going for a highly fermentable, dry beer. "In that situation, 163 makes sense. I did it on my last batch. I achieved my best efficiency to date and fermentation went like gangbusters. This wasn't a huge beer (1.046 SG) and I nearly had a blowout with 5 gallons in a 6.5 gallon Ale Pail (the kreusen crept up the airlock but didn't quite go out the top)."
