Notes: 1. Prepare the Potatoes:
Peel and shred the potatoes. Boil them in about 1 quart of water until soft, then mash thoroughly. Allow them to cool slightly before adding to the mash.
2. Mash the Grains:
Heat 1.5 gallons of water to 152°F (67°C).
Add the crushed grains and mashed potatoes in a grain bag. Maintain the mash at 152°F for 60 minutes. Stir occasionally to ensure even conversion.
3. Sparge:
Rinse the grain and potato mixture with 1 gallon of water at 170°F (77°C) to extract sugars.
4. Boil:
Bring the wort to a boil. Add 0.3 oz of Fuggle hops at the start of the 60-minute boil.

Notes: As prepared kit had calculated ABV of 4.21, within the range of a British Brown Ale (4.2-5.4). All specs matched the style. Increasing the sparkling amber DME from 2 lb to 3 lb increased the calculated ABV to 5.08. All specs continued to march the style except IBU dropped to 19.81 (min is 20). Adjusted boil time for second hop addition from 30 to 45 minutes to get 21.48 IBU |
