The low color wheat was from GW and was a swap for the White Wheat, he suggested it would be better as the flavor same but color lighter
Boil pull 1.5 - 2 G for stove works for this beer as well all they way to 1-2Q if I want but no further
HOPS: Tettnang or Hallertau Tradition.
The Strategy: Aim for 18–22 IBU. This beer is all about "bready" malt, so the hops should smell like a summer meadow—spicy but subtle.
The Suggestion: * 60 min: 1 oz Tettnang (or Mittelfrüh).
20 min: 0.5 oz Tettnang. This provides a "noble" aroma that marries perfectly with the Isaria malt.

Why the 63°F Start works for this Helles:
The "Medium" Gravity Factor: Because this isn't a standard 4.5% Helles, the yeast has a lot of sugar to process. Starting at 63°F gives the G01 the kinetic energy it needs to build strong cell walls and finish the job without stalling.
The Esters: At 63°F, Stephon produces very low esters. Any tiny hint of pear or white grape it does produce actually complements the Isaria 1923 and Vienna malts beautifully, adding a "noble" complexity. |
