- Mash 31L, batch 21L, mash & boil 60min. OG:1063 (refract.)
- Used 270g of oats instead of 400g as I was short.
- Cold drip used for max flavour to make it as light in colour as possible, looking for a pale finish.
- Hops chosen to be fruity to match the fruit flavours of the cold drip
24/6/19 - Dry hopped (35g & 50g dry hop changed from 40g of each)
30/6/19 - Kegged and carbed (30psi for 2:45 min), 200ml of cold drip added before carbing
2/7/19 - Pours cloudy deep orange, tight white head,
26/7/19 - It's a pretty ordinary beer, the flavours are a bit muddled with a mix of fruit and early coffee.

Notes: 1. Take yeast out and allow to reach room temperature (unless Imperial)
2. In your kettle, heat 3 gallons of water to 155 F
3. Fill your steeping bag with your specialty grains and knot at the very top
4. When the water reaches 155 F, turn off heat and steep the grains for 30 minutes
5. Remove the steeping bag, squeeze out excess liquid and discard.
6. Carefully add your Dry Malt Extract (DME), stirring to avoid clumps. You liquid in your kettle is now wort (malt liquid).
7. Bring your wort to a boil
8. When the wort is at full boil, add .75oz Centennial hops to the boil and start a 60 minute timer
9. After 45 minutes, with 15 minutes remaining, add .5 oz Cascade hops and .25 oz Centennial to the boil and 1 tsp Irish Moss
10. Continue boiling for the remaining 15 minutes. Add .5 oz Cascade and turn off heat.
11. Cool wort by placing kettle in an ice bath in your sink.
12. When it reaches about room temperature, rack your wort into your fermentation vessel.
13. Top off the your fermentation vessel with cool water to reach 5 gallons of wort.
14. Use your hydrometer to find your original gravity and record
15. Pitch your yeast and place airlock (and lid) on your fermentation vessel.
16. When visible signs of fermentation have disappeared for several days, at least 14 days, rack your beer into your bottling bucket.
17. Add 5 oz priming sugar to 1 cup water and bring to a simmer. Allow to cool some, then add to bottling bucket. Stir gently with sanitized bottling wand.
18. Fill bottles and cap.
19. Store bottles at room temperature for 14 days.
20. Refrigerate overnight

Notes: Water for partial mash: dilute water with distilled or RO water, if needed, to below 100 ppm carbonates (bicarbonate ions (HCO3–) or “alkalinity as CaCO3”), add calcium, if needed, to make 100 ppm Ca2+, use 3:1 ratio of gypsum and calcium chloride for adding calcium ions
(for dilution: filtered tap water)
Procedure:
1. Make yeast starter 2–3 days ahead of brew day.
2. On brew day, heat 4.1 qts. of brewing liquor to 165 °F and mash grains at 154 °F for 60 minutes. Stir every 8 minutes or so, if you can do so without losing a significant amount of heat.
3. Collect around 1.75 gallons of wort. Add water to make at least 4.0 gallons of wort. Stir in roughly 1/2 of the malt extract, hold at 154 °F for 5 minutes, then bring to a boil.
4. Boil the wort for 90 minutes. (If hot break does not appear as big, fluffy flakes after first 15 minutes of boil, add 0.5 tsp. gypsum.)
5. Add hops and Irish moss / whirfloc at times indicated. Add water, if needed, so boil volume never drops below 3.5 gallons.
6. Dissolve remaining malt extract in wort and stir in with 10 minutes left in boil. (You can do this in shifts.)
Option: add Fermax 0.5 tsp per gallon as yeast nutrient, 15 minutes before the end of boil.
7. Chill wort to 70 °F. If using an immersion chiller, swirl chilled wort and let sit for at least an hour (covered) to let hop debris settle.
8. Transfer wort to fermenter, leaving as much hop debris and trub behind as possible. Add water to yield 5.0 gallons.
9. Aerate the wort thoroughly and pitch sediment from yeast starter.
10. Ferment at 70 °F. If dry hopping in a keg, let beer fall (at least mostly) clear before racking.
11. Dry hop for 7 days. Avoid exposing beer to oxygen as much as possible when transferring wort and dry hopping after fermentation.
Double Dry Hopped Option:
Note to make the Double Dry-Hopped version, remove the first charge of dry hops and add a second charge of the same amount. You can use more Centennial. Simcoe, Citra or Amarillo also work really well. |
