Notes: Add dry yeast to top of the Wert. Place fermenter in a warm area (60-65°F).
Approx 1-3 days after adding the yeast and healthy fermentation is taking place, move your fermenter to your cool area (48-60°F). Basement floors during colder months or a refrigerator with temperature control.
Wait 7-10 days of fermentation, then allow to rise to room temperature for 24 hrs. Diacetyl rest. Transfer into a glass carboy for 3-12 weeks at lagering temperature (36-45°F). |

Notes: This brew was designed around what grains my local shop had in stock. The goal was a lightly coloured, high alcohol braggot (a type of barley wine/mead.) I wanted 2-row to be the main grain, & the Avangard pre-ground was on the shelf; a 20L Caramel/Crystal (they had darker) milled in the store was a last minute addition. I ended up using 4lb of raw buckwheat honey + 2lb or raw wildflower honey, which took this from pale to well into the amber. I did want Kent Goldings to be front, and chose the nugget just cause. Love me some 71B for most of my meads, so went there here.
3rd day gravity reading: 1.032 (current ABV ~13% per the Hall Equation.) Too much hops at this point.
9th day gravity reading: 1.030. Keeping it in primary, adding the red star now. Well, really the lees from my hydromel. Hopefully this kickstarts some fermentation. If not, I will try a champagne yeast. Hops are strong, but in a really good way—my hop-head sister will love this if I can get the FG down. |

Notes: 1 packet US-05 is 0.39 pitch rate.
Bring 1.25 Gal water up to 156 deg F in kettle, add grains in bag to mash water and stir thoroughly to break up dough balls. Let sit for 60 minutes; before mash is complete heat sparge water in a sauce pan or tea kettle to 180F. Remove bag from kettle and place colander in top of kettle. Turn burner to high, and sparge the grains in the colander. After sparging discard grains and continue as you would with a normal extract recipe.
Adjusted for no-chill, with extended hop boil time of 10 minutes, and smaller boil volume. |
