Notes: Overall Impression: An intensely hoppy, muscular, bitter pale ale without the big, rich, complex maltiness, residual sweetness, and body of an American Barleywine. She is intensely hopped but clean, dry, and lacking harshness. Despite showing its strength, drinkability is a critical consideration.
Aroma: A prominent, intense hop aroma typically featuring modern American or New World characteristics such as citrus, floral, pine, resin, spice, tropical fruit, stone fruit, berry, or melon. A supportive, clean, neutral to grainy maltiness may be found in the background. Neutral to lightly fruity fermentation profile. Alcohol may be noted but should not be solvent.
Appearance: Gold to light orange-copper color, but most modern versions are relatively pale. It has good clarity, although a bit of haze is acceptable. Moderate-sized, persistent, white to off-white head.
Flavor: Strong and complex hop flavor (same descriptors as aroma). Moderately high to very high bitterness but should not be harsh. Low to medium supportive, clean, soft, unobtrusive malt character; may have light caramel or toast flavors. Dry to medium-dry finish, not sweet or heavy, with a lingering hoppy, bitter aftertaste. Low to moderate fruitiness is optional. A light, clean, smooth alcohol flavor is allowable.
Mouthfeel: It has a medium-light to medium body and a smooth texture. It has medium to medium-high carbonation and no harsh hop-derived astringency. Restrained, smooth alcohol warmth is acceptable.
Comments: Rarely called Imperial IPA. Many modern versions have multiple dry-hop additions.
History: An American craft beer innovation, Russian River Pliny the Elder, first developed in the mid-late 1990s as a more intense version of American IPA. It became more mainstream and widespread throughout the 2000s, inspiring additional IPA creativity. Russian River Pliny the Elder first brewed in 2000, helped popularize the style.
Characteristic Ingredients: Neutral base malt. Sugar adjuncts are common. Crystal malts are rare—American or New World hops—neutral or lightly fruity yeast. No oak.
Style Comparison: Bigger than English and American IPAs in alcohol strength, bitterness, and hoppiness. It is less malty-rich, has less body, is drier, and has a more excellent overall hop balance than American Barleywine.

Knockout a few degrees lower than your primary temperature, allow it to climb to 49F.

If you'd like to mimic Bierstadt's use of a float tank, knockout into a fermenter, pitch your yeast and then 12 hours later transfer your beer into a new fermentation vessel, leaving behind about 1c of wort from the bottom. This helps clarify the beer and leave some of the weaker yeast behind.
49F is the suggested primary temperature for first-use yeast. Subsequent generations can be fermented at a 47F primary temperature, as they are more battle-tested.
After 2 weeks in the primary, you can rack into a corny keg. Keep at 49F for another week and allow some pressure to build in the keg.
After week 3, make sure your beer passes a diacetyl test (warm up a small sample and smell/taste for butter). Once it passes diacetyl, slowly lower the beer, dropping 1F every other day until you reach 40F. Leave at 40F for a week.
Then slowly lower 1F per day to get to 33F. Rest here at least two weeks. After 2 weeks you may see diminished returns, but if you're patient, further resting can continue to improve the beer.
*Note the ABV and IBUs listed in this recipe are a bit higher than what are listed on the label of the beer. Ashleigh shared with me that this is due to lab tested results, which come back a little lower in ABV and IBUs. She says to use the #s that I provided here, roughly 37 IBUs and a 1.047SG - 1.008FG. Brewing software may not estimate such a low final gravity, but shoot for 80%+ apparent attenuation on this recipe. |

Fermentation:
You will get the best flavor results if you have the ability to raise the temperature slowly as the end of fermentation approaches. Start your fermentation at between 17°C. Keep the temperature on the cool side until the most lively part of the fermentation is complete.
As the fermentation begins to slow, let the temperature rise slowly over the last two or three days, and allow it finish out between 21-24°c. The early cool temperature will help control ester and phenol production while the temperature climb will help with attenuation and cleaning up DMS. |
