Notes: - 1 to 1.5 lb air-popped popcorn in the mash.
- Air pop the popcorn and add to the milled malt just before mashing. (1 lb of popcorn is about 2 cups unpopped kernels). Popcorn will soak up the water about the same amount as milled grain does and sink. I stir once during the step mash.
- Add the light honey at flame out. Do not boil honey or you will loose the honey flavor, (orange blossom, light clover etc). I use raw clover but any will work.
- Aim for low IBUs, 10-15 at most, no more or it will overshadow the honey.
- Use very low mineral water, I start with distilled.
-Do not do a protein rest, it destroys the head on this beer! A hochkurz mash schedule or simple infusion mash @ 150 degrees is fine.
- Use a high attenuating yeast, Rocky mountain, Diamond, Copenhagen, 34/70. You dont want any fruity tastes from the yeast.
- Most definitely improves with lagering; 6-8 weeks. The light honey taste will start to become noticeable. If you can keep out of it while it lagers its a great beer.
*Named after my dog Popcorn, who was my quality control guy on brew day. He vigilantly watched for anything that fell on the floor and got a bowl of spent grain at the end of the mash. I made dog cookies out of the remaining adding either pumpkin or peanut butter. PS he absolutely hated popcorn, wouldnt touch it, go figure...He passed 03/29/22 and is greatly missed. |

Notes: After mashing, bring to boil. Chill to 40 deg C.
Lactol to pH=4,5.
Pitch 3 dl Biola
Flush CO2 in headspace and cover the wort with gladpack.
Let it sit until ph=3,5.
Boil 60 min and add 0min hops.
Chill to 20 deg C and pitch yeast.
After 4 days, add hops
Last dry hop: 2 days in fermentor in normal temp, and 2 days during CC - 4 days in total.
Brewday was ok. The store only had Biola with blueberry taste, wich was my first mistake. The taste and aroma never never went away, so for next time use clean Lactobacillus. Second mistake was that I boiled it to soon. Stoped at pH=3,7. This was because I had to leave for work.
Had two rounds of dry hopping, first one in a filter for 4 days and second directly in the vessel.
Temperature under fermentation was a little bit low, 16-17 degC.
CC for two days and kegged it (Closed System)

LHBS didn't have WYeast 1010 so I used WLP320 American Hefeweizen Ale Yeast
Dry hopped 5 days in for 3 days with 20 gram of Mandarina Bavaria
Then added 0.25 pound more honey with 2 tablespoon DME and boiled water
Total fermentation time was 3 weeks

Notes: 30lts of 1.060 gravity wort divided into 5 x 5lt fermenters. 2 year old aged hops used for very low IBU's and a subtle old flavour. High mash at around 70C to promote unfermentable sugars. FV's consist of the following:

Notes: Strike water as always, is mash water needed plus the 2g. of underlayment. Make sure to use the full volume of water when calculating the strike temp!!
Made starter from 3000ml of spring water and .75lb. of DME.
Mashed in OK - shooting for 122, got 124. Other targets good. Sparged for 90 minutes - no stickies, no problems!!
First runnings - 1.063
Last runnings - 1.010
Preboil gravity - 1.041
Boiled 90 minutes and added spices to wort before whirlpool - let sit 10 minutes. Added 3 qts. to bring OG to 1.050. Cooled and into the fermenter - 66 degrees! Collected 11+ g. Pitched yeast immediately and into the fridge at 68. Activity apparent after 16 hours. Kept at 68 for 3 days, up to 70 for one and up to 72 for another. Gravity then at 1.011. Crashed.
Into kegs after another week - tasted fantastic - very wit-like! This one went Very fast. Very refreshing - great daytime summer beer. But near the end it had lost its cloudiness and a little of the good spice flavorings. Drink this one fresh! |
