Notes: Erste Hopfengabe direkt beim Läutern in die Würze geben.
Ca. 90 min. sprudelnd kochen. Sobald es kocht: Deckel ab bzw. nur halb auflegen.
Zweite Hopfengabe (Whrlpool) nach dem Kochen, sobald die Hitze aus ist.
Dann kräftig anrühren (Whirlpool) und ca. 5 min. warten, bis sich die festen Stoffe in der Mitte des Topfes abgesetzt haben. Vom Rand her abziehen in den Gärbottich (ohne Hahn).
Nicht vergessen: Nach dem Kochen ca. 1,2 Liter Speisegabe abfüllen und einfrieren.
Den Gärbottich auf ca. 20 °C abkühlen lassen und Hefe hinzugeben.
Gärung:
Optimale Gärtemperatur zw. 16 und 20 °C.
Wenn der Hefeschaum sich abgesenkt hat, ist die stürmische Gärung vorbei, es beginnt die Nachgärung. Jetzt das Bier umfüllen in zweiten Behälter (mit Hahn).
Wenn es nur noch etwa alle 30 sec. blubbert, dann dritte Hopfengabe (Dry Hop, Hopfenstopfen, Kalthopfen) zugeben. Nach fünf Tagen ist das Bier fertig zum Abfüllen.
Beim Abfüllen:
Die Speisegabe direkt vor dem Abfüllen noch einmal abkochen und zum Bier geben.
Dann abfüllen. |
